Ingredients: simple, total time: 90 min.

Crust:

  • 4 eggs

  • 200 g sugar

  • 100 ml milk

  • 50 ml oil

  • 2 Tbsp vinegar

  • 2 Tbsp bitter cocoa powder

  • 1 tsp red color for food

  • 250 g flour

  • 1 bag baking powder/ 10 g

  • 20 x 30 cm baking dish


Cream:

  • 250 g neutral cream cheese + 2 Tbsp powdered sugar

  • 100 g of granulated sugar

  • 500 g of whole milk

  • 5 egg yolks

  • 1 tsp vanilla sugar/ or 1/2 tsp vanilla extract, or 1/2 vanilla pod seeds

  • 20 g flour 00


To fill the filling as desired - optional:

  • 100 g raspberries

  • 100 g strawberries

  • 80 g chocolate drops

  • 2 bananas

Preparation:

Crust:

  1. Beat the eggs and sugar until light and fluffy on high speed for about 8-10 minutes. Then add milk, vinegar, oil, cocoa, red color for food and mix briefly, until uniform well.

  2. After that, add mixed flour with baking powder and combine everything well.

  3. Take a 20x30 pan and grease it, line it with paper and pour the mixture, and level it.

  4. Bake in a preheated oven at 170°C for about 25-30 minutes.

  5. Leave the crust to cool for a few minutes, then separate the crust from the paper, when it has completely cooled, cut it in the middle so that you get two identical crusts of rectangular dimensions. Set aside.

  6. Now you can start making the cream.


Cream:

  1. Beat egg yolks with sugar and vanilla sugar until foamy. Then add flour, mix again with mixer on low speed. Mix everything well without lumps.

  2. Separate a little milk and pour it into the egg yolk mixture and mix well.

  3. Pour the rest of milk into the saucepan and heat over low to moderate heat.

  4. When the milk has become hot, add the mixture slowly and mix with a hand whisk until you get the consistency of the mixture you are looking for.

  5. Pour the finished cream into a bowl and cover with transparent foil so that it is directly in contact with the cream. Leave at room temperature to cool.

  6. When the cream has cooled, beat the cream cheese and powdered sugar until foamy.

  7. Add the cooled yellow cream to the cream cheese and beat at the same time until you get a uniform cream.


Assamble cake:

  1. Cut out the bumps on both crusts about 5mm thick. You will grind that cut part in a blender to get crumbs for decoration.

  2. Place the first crust on a decorative tray so that the cut of the crust is visible.

  3. Cover with half of the cream and smooth.

  4. Now arrange chocolate drops, or bananas or raspberries, the choice is yours.

  5. Place the second crust so that the cut is facing up.

  6. Cover with the rest of the cream and smooth on all sides.

  7. Sprinkle with crust crumbs.

  8. Place the cake in the refrigerator to set well for at least 3 hours or overnight.
