Quick and Easy Coconut Biscuits
If you're in search of a delightful treat that is both quick and easy to prepare, look no further than these delicious coconut biscuits. Made primarily from egg whites and a generous mixture of finely shredded coconut, these biscuits are not only simple to make but also incredibly satisfying. The combination of ingredients creates a fragrant and soft texture that will surely please your palate and brighten your day.
Ingredients
To embark on this delightful baking adventure, you will need the following ingredients:
- 2 large egg whites
- 1 cup of finely shredded coconut (unsweetened for a more authentic flavor)
- 1/2 cup of granulated sugar
- 1 teaspoon of vanilla extract (optional, for added flavor)
- A pinch of salt
Instructions
1. **Preheat the Oven**: Begin by preheating your oven to 350°F (175°C). This ensures that your biscuits will bake evenly and achieve that perfect golden-brown hue.
2. **Prepare the Baking Sheet**: Line a baking sheet with parchment paper. This will prevent the biscuits from sticking and make cleanup a breeze.
3. **Whip the Egg Whites**: In a clean mixing bowl, use an electric mixer to beat the egg whites until they form soft peaks. This step is crucial as it incorporates air into the mixture, giving your biscuits a light and airy texture.
4. **Combine Ingredients**: In a separate bowl, mix the shredded coconut, sugar, vanilla extract, and a pinch of salt. Once combined, gently fold the whipped egg whites into the coconut mixture. Be careful not to deflate the egg whites; the goal is to maintain that fluffy texture.
5. **Shape the Biscuits**: Using a spoon or a small cookie scoop, drop dollops of the mixture onto the prepared baking sheet. Leave some space between each dollop as they will spread slightly during baking.
6. **Bake**: Place the baking sheet in the preheated oven and bake for approximately 15-20 minutes, or until the biscuits are lightly golden on the edges. Keep an eye on them to prevent over-baking, as they can become dry if left too long.
7. **Cool and Enjoy**: Once baked, remove the biscuits from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack. This cooling period helps them firm up slightly and makes them easier to handle.
