  • Olive oil to taste

  • 2 large cloves of garlic/ minced

  • 1. 2 kg mussels

  • 250 g vongole - clams

  • 100 ml dry white wine

  • 1 tsp dry parsley

  • 1 full Tbsp tomato passata sauce

  • 2 Tbsp breadcrumbs

  • salt and black pepper to taste,

  • lemon slice juice as you like - optional

  • 1 Tbsp fresh parsley/ finely chopped

  • 250 - 300 g spaghetti

Preparation:

Preparation Mussels and clams:

  1. Thoroughly clean the shells using a brush, similar to the method used for vongoles, to eliminate all impurities. Rinse them well under cold running water.


Frying Mussels and clams:

  1. Pour the olive oil into a large pan and heat it over low to moderate heat. Add the chopped garlic and stir gently.

  2. Once the garlic becomes aromatic, add the vongole and clams. Reduce the heat, cover the pan, and stir occasionally for approximately 10 minutes.


Preparation water for spaghetti:


  1. Meanwhile, add the spaghetti water and wait for it to reach a boil.


Continue sauce of Mussels and clams:

  1. Once the mussels and clams have opened, turn off the heat. Discard any that remain closed. Remove the seafood from their shells, reserving 8-10 pieces for plate decoration.

  2. Reignite the heat and allow the pan to warm. Add white wine, parsley, a pinch of salt, and black pepper to taste. Stir the mixture thoroughly and wait for the alcohol to evaporate.

  3. Subsequently, incorporate the tomato sauce and two tablespoons of breadcrumbs, mixing well.

  4. When the water reaches a boil, add the spaghetti and cook according to the package instructions. Drain the cooked spaghetti thoroughly.

  5. Once the sauce has thickened (you may add the juice of half a lemon and let it simmer for about 2 minutes), add the drained spaghetti. Stir and cook for approximately 2 minutes, then turn off the heat. Garnish with fresh parsley.

  6. Serve warm, garnished with the reserved shells on the plate.
