## The Bold Flavors of Spaghetti Puttanesca
Pasta alla Puttanesca is a traditional Neapolitan dish known for its simplicity, speed, and affordability. Despite its minimal ingredients, this dish offers remarkable flavor, making it an ideal choice when you desire a satisfying meal without extensive preparation. The foundation of this delightful dish consists of tomatoes, garlic, and olives. While chili pepper is optional, it enhances the dish beautifully for those who enjoy a bit of heat. Generous amounts of parsley can also be added for extra flavor. Please follow the recipe for detailed instructions.
Ingredients: simple, total time: 30 min. 2 servings
240 g spaghetti
Olive oil EVO to taste
200 g pork bacon Guanciale
3 anchovies
2 cloves/ minced
4 black olives/ pitted and cut in half
1 whole chili pepper
1 Tbsp capperi
200 ml tomato paste
200 ml water
salt and pepper to taste
1 tsp oregano/ or parsley
Preparation:
Rinse the capers under running water to remove the salt. Pit the olives, if necessary.
In a large pan, heat a generous drizzle of extra virgin olive oil and sauté the garlic cloves and chili pepper.
Add the anchovy fillets and cook over low heat until they become creamy.
Add the capers and black olives. Let them cook for a minute.
Add the tomato paste or cherry tomatoes.
Cook over low medium heat for about 15 minutes, until the sauce thickens.
Cook the spaghetti in plenty of salted water, be careful not to over-salt, as the sauce is already salty and drain when al dente.
Toss the pasta directly in the pan with the sauce, adding a little of the cooking water if necessary.
Turn off the heat, add the chopped fresh parsley and a drizzle of raw olive oil.
Serve immediately.

NOTE:
Lazio Version: Often includes sun-dried tomatoes and uses salted anchovies instead of oil.
Origin: Tradition has it that it originated in Naples in the mid-1900s, called "puttanesca" for its quick preparation and intense aroma, or for the striking mix of colors (red, black, and green) that recalled the dresses of the young ladies of the red-light district.
The true Neapolitan recipe does not include onions.
