6 medium white potatoes
200 g green beans
70 g chickpeas/ already boiled
salt and pepper to taste
Olive oil EVO to taste
10 black olives
2 Tbsp pesto Genovese
grated Parmesan cheese to taste
Preparation:
Wash the potatoes well and put them in their skins to cook for about 30-33 minutes on low to moderate heat.
Cool the potatoes well, then peel them and cut them into cubes or smaller pieces.
Wash the green beans and soak them in salted water for about 20 minutes.
After the spinning time, drain them well, clean of steams and cut them into smaller pieces or in half.
In a deep salad bowl, add chopped potatoes, chopped green beans, salt, pepper, Genovese pesto, olives and chickpeas already boiled from can, which you have strained and rinsed well.
Drizzle with olive oil and a little vinegar. Stir well.
Place the salad in the refrigerator to cool for at least 30 minutes before serving.
