250 g green beans/ cut in half
3 medium carrots/ cut into rings
2 cloves of garlic/ minced
1/2 lemon juice/ or apple acid vinegar
50-70 ml Olive oil EVO/ or to taste
salt and black pepper to taste
Herbs as desired: oregano, weed dill or dry parsley
Preparation:
Wash and clean the green beans, cut them in half if they are too long.
Place a medium deep pot of water and add a teaspoon of salt. Wait for it to boil.
Add the green beans and cook for 5–6 minutes from the boiling point.
Meanwhile, rinse, peel and separate the ends of the carrots.
After 5 minutes of cooking the green beans, add the whole carrots and continue cooking together for another 10 minutes.
Once cooked, drain the vegetables and let them cool completely for about 40 minutes in a strainer.
Pour the complete green beans and sliced carrots into a salad bowl.
Season with 1 clove of minced garlic, 2 spoons of extra virgin olive oil, juice of 1/2 lemon, salt, pepper, and oregano or other herbs. Stir all together.
Serve the carrot-green bean salad simply and deliciously, as a side dish to any other dish with some steaks, as you like.
