A Delicious Plum Cake Recipe with Vanilla Cream

  • A beautiful, tasty plum cake is a delightful dessert that brings together the rich flavors of ripe plums and the lightness of a fluffy sponge cake. This cake is particularly celebrated for its moist texture and the way it melts in your mouth, making it a perfect treat for any occasion.

Ingredients

To create this scrumptious plum cake, you will need the following ingredients:

- **For the Sponge Cake:**

- 1 cup all-purpose flour

- 1 teaspoon baking powder

- 1/2 cup unsalted butter, softened

- 1 cup granulated sugar

- 2 large eggs

- 1 teaspoon vanilla extract

- 1/2 cup milk

- A pinch of salt

- **For the Plum Topping:**

- 2 cups ripe plums, pitted and sliced

- 1/4 cup brown sugar

- 1 teaspoon cinnamon

- 1 tablespoon lemon juice

- **For the Vanilla Cream:**

- 1 cup heavy whipping cream

- 2 tablespoons powdered sugar

- 1 teaspoon vanilla extract

Instructions
Preparing the Sponge Cake

1. **Preheat the Oven:** Start by preheating your oven to 350°F (175°C). Grease and flour a round cake pan to ensure the cake releases easily after baking.

2. **Mix Dry Ingredients:** In a medium bowl, whisk together the flour, baking powder, and salt. Set this mixture aside as you prepare the wet ingredients.

3. **Cream Butter and Sugar:** In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy. This should take about 3-5 minutes using an electric mixer.

4. **Incorporate Eggs and Vanilla:** Add the eggs, one at a time, mixing well after each addition. Then, stir in the vanilla extract to infuse the batter with a warm flavor.

5. **Combine Mixtures:** Gradually add the dry ingredients to the wet mixture, alternating with the milk. Begin and end with the flour mixture, mixing until just combined to avoid overmixing.

Preparing the Plum Topping

  • 6. **Prepare the Plums:** In a separate bowl, combine the sliced plums with brown sugar, cinnamon, and lemon juice. Toss gently to coat the plums evenly and let them sit for a few minutes to release their juices.

Baking the Cake

  • 7. **Assemble the Cake:** Pour half of the sponge cake batter into the prepared cake pan. Evenly distribute the plum mixture over the batter, followed by pouring the remaining batter on top, ensuring the plums are well-covered.

  • 8. **Bake:** Place the cake in the preheated oven and bake for about 30-35 minutes or until a toothpick inserted into the center comes out clean. The top should be a lovely golden brown.

  • 9. **Cool:** Once baked, allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Making the Vanilla Cream

  • 10. **Whip the Cream:** In a chilled mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the cream until soft peaks form. Be careful not to over-whip, as you want the cream to remain light and airy.

Serving the Cake

  • 11. **Serve:** Once the cake has cooled completely, slice it into generous pieces. Serve each slice with a dollop of the freshly whipped vanilla cream on top. The combination of the sweet, juicy plums and the light, fluffy sponge cake, paired with the rich vanilla cream, creates an unforgettable dessert experience.

Preparation:

Bark:

  1. Combine the flour with the baking powder.

  2. Transfer the prepared flour into a larger plastic bowl and create a well in the center.

  3. Add the melted and cooled butter, sugar, egg, and vanilla sugar to the well, and mix thoroughly using a wooden spoon.

  4. Proceed to knead the mixture by hand.

  5. Divide one-third of the dough, shape it into a ball, wrap it in cling film, and refrigerate.

  6. Place the remaining dough between two sheets of greaseproof paper and roll it out to fit the dimensions of a baking tray.

  7. Use a ruler to occasionally press the edges of the dough to achieve smoother sides.

  8. Prepare a baking tray measuring 19 × 30 cm by lightly greasing and flouring it.

  9. Transfer the rolled dough to the baking tray using a rolling pin.

  10. Gently press the edges with your fingers as necessary.

Cream:

  1. Begin by washing the plums, quartering them, and removing the stones.

  2. This step should be completed prior to preparing the cream, as the plums are placed on the hot cream.

  3. Combine the pudding mix with a small amount of milk.

  4. Bring the remaining milk and sugar to a boil.

  5. Once the milk reaches a boil, remove it from the heat and incorporate the prepared pudding.

  6. Return the pudding mixture to the heat for further cooking.

  7. As soon as the pudding begins to boil, remove it from the heat and promptly stir in the sour cream.

  8. Spread the cream over the dough and smooth it with a spatula.

Stacking:

  1. Place the plums you have prepared on the hot cream and lightly press.

  2. Sprinkle sugar over plums, then cinnamon.
