Ingredients: simple, total time: 45 min. 20 serving

Crumbs:

  • 50 ml oil

  • 200 g breadcrumbs

  • 4 Tablespoons of granulated sugar

  • 1 bag vanilla sugar/ 10 g


White Filling:

  • 1 liter of milk

  • 16 Tablespoons of granulated sugar

  • 2 bags vanilla sugar/ 20 g

  • 13 Tablespoons semolina

  • 70 g butter

  • 1 egg


Plum Filling:

  • 1 kg of plums/washed, pitted or other fruit

  • 3 Tablespoons of granulated sugar

  • 2 bags vanilla sugar/ 20 g

  • 2 Tablespoons of plum jam

Preparation:

Crumbs:

  1. In the pan, combine oil, crumbs, and 4 tablespoons of sugar.

  2. Gently reheat over low to moderate heat, stirring until the crumbs achieve a light brown color.

  3. Once the crumbs are lightly browned, remove from heat and incorporate vanilla sugar. Set aside.


Plum Filling:

  1. In a separate pot, place the cleaned and halved plums, then add 3 tablespoons of sugar and 2 packets of vanilla sugar. Stir the mixture and cook over moderate heat for 15 minutes, until the plums soften.

  2. Once the plums have softened, incorporate 2 tablespoons of homemade plum jam and stir well. Continue cooking for an additional 2 minutes, then remove from heat and allow to cool.


White Filling:

  1. In a medium saucepan, combine milk, sugar, and vanilla sugar. Cook over low to moderate heat. Once the milk is heated and begins to boil, incorporate the semolina, stirring the mixture thoroughly. As the semolina thickens, continue stirring for an additional minute. Reduce the heat and add the butter, ensuring all ingredients are well combined. Use a hand whisk to stir.

  2. Meanwhile, beat the egg. Remove the saucepan with the semolina from the heat, gradually add the egg while stirring briskly. Return the pot to the stove, stir, and cook for approximately one minute until it begins to boil. Immediately remove from the heat and allow it to cool at room temperature.


Processing:

  1. It is essential to proceed with the following steps promptly, as the semolina sets quickly.

  2. Prepare a 40 × 25 cm dish by coating it with butter. Distribute half of the crumbs evenly on the bottom, ensuring it is fully covered. Smooth and level the surface.

  3. Spread half of the white filling over the crumbs, ensuring an even and smooth layer.

  4. Pour the entire amount of plum filling over the white filling, spreading it evenly and leveling the surface.

  5. Apply the remaining white filling over the plum layer, spreading it evenly and flattening it.

  6. Top with the remaining crumbs, distributing them evenly and leveling the surface with a spoon or spatula.

  7. Allow the prepared cake to rest overnight. The following day, cut it into cubes and serve.
