Ingredients: simple, total time: 70 min.

Cake batter:

  • 7 egg whites

  • a pinch of salt

  • 1 bag of vanilla sugar/ 10g

  • 250 g butter

  • 150 g granulated sugar

  • 5 egg yolks

  • 150 ml milk

  • 350 g sharp flour/ or all-purpose flour

  • 1 bag baking powder/ 6 g

  • 3 Tbsp cocoa powder + 1 Tbsp milk


Chocolate Filling:

  • 2 egg yolks

  • 150 g granulated sugar

  • 150 ml milk

  • 200 g butter

  • 250 g cooking chocolate

  • 170 g ground roasted hazelnuts

  • 100 g ground biscuits


and:

  • powdered sugar for dusting

Preparation:

Cake Batter:

  1. Separate the 7 egg whites from the yolks. Reserve 5 yolks for the cake batter and keep the remaining 2 for the filling.

  2. Add a pinch of salt and the vanilla sugar to the egg whites, then beat with a mixer until stiff peaks form. Set aside.

  3. In a separate bowl, cream the room-temperature butter and sugar together; incorporate the egg yolks and mix until the mixture becomes light and fluffy, ensuring most of the sugar is dissolved.

  4. Subsequently, add the milk, flour, and baking powder, and briefly mix until a stiff batter forms; then set the mixer aside.

  5. Gently fold in the beaten egg whites in three batches, using a whisk each time to maintain the batter's airiness. Vigorous mixing may cause the batter to deflate, resulting in dense cake layers.

  6. Divide the yellow batter into two equal portions; add the cocoa powder and a tablespoon of milk to one portion, and gently incorporate them using a whisk.


Baking sponge cake:

  1. Prepare two baking pans, each measuring 40×20 cm, by lining them with parchment paper.

  2. Pour the yellow batter into one pan and the dark cocoa batter into the other.

  3. Bake both layers in an oven preheated to 180°C for approximately 20 minutes.

  4. Check for doneness by inserting a toothpick; if it emerges clean, the cake is ready.


Chocolate Filling:

  1. In a small saucepan, combine the egg yolks and sugar, whisking thoroughly until the mixture becomes lighter. Incorporate the milk, butter (cut into pieces), and chocolate (broken into chunks), and whisk until well blended.

  2. Set the saucepan over medium heat, stirring continuously with a whisk, until the ingredients have melted and are fully combined.

  3. Once melted, continue cooking for an additional 5 minutes until the mixture slightly thickens. Remove from heat and promptly stir in the ground roasted hazelnuts and ground biscuits. Mix thoroughly with a spoon and allow the mixture to cool slightly, facilitating cake assembly.


Assembling cake:

  1. Carefully remove the parchment paper from the cooled cake layers.

  2. Place the yellow layer back into the pan first, then evenly spread the filling over it.

  3. Place the dark cake layer on top and refrigerate the cake to allow the filling to cool and set completely, either for a few hours or overnight. If desired, you may reverse the order of the cake layers.

  4. Keep the dessert covered in the refrigerator until the next day; allowing it to set overnight will improve its texture.


Serving:

  1. The following day, use a sharp, thin knife to cut the cake into bars of your preferred size and dust them with powdered sugar.
