  • These bars are crafted specifically for the holiday season, such as Christmas or New Year, and are perfect for any festive occasion. The collection includes three distinct recipes featuring walnuts, poppy seeds, and a chocolate topping. The preparation process is straightforward, and the bars are dried in the oven instead of being traditionally baked. They are soft, exceptionally delicious, and melt in your mouth. Please refer to the recipe for detailed instructions.

Ingredients: simple, total time: 130 min. about 35 bars
1. Recipe for white bars with Walnuts
  • 2 egg whites

  • 170 g of powdered sugar

  • 1 bag vanilla sugar/ 10 g

  • 250 g of walnuts/ + 100 g for sprinkle work surface

  • 1 Tbsp of freshly squeezed lemon juice

2. White bars with Poppies
  • 2 egg white

  • 170 g of powdered sugar

  • 1 bag vanilla sugar/ 10 g

  • 200 g of poppy seeds/+ 50 g for sprinkle work surface

  • 1 Tbsp of lemon juice

3. Bars with Walnuts and Chocolate topping
  • 2 eggs

  • 170 g powdered sugar

  • 1 bag vanilla sugar/ 10 g

  • 250 g ground walnuts/+100 g to sprinkle on work surface

Chocolate Topping:

  • 50 g chocolate

  • 1 Tbsp oil

Preparation
White Bars with Walnuts:
  1. In a large bowl, whisk 2 egg whites with sugar until stiff peaks form. Add 1 tablespoon of lemon juice to the egg whites and continue mixing for a total of about 10 minutes.

  2. Separate the mixture into larger and smaller portions (2/3 and 1/3). Incorporate 250 g of walnuts into the larger portion, mixing initially with a spatula, then proceed to mix manually. Divide the dough mixture into two parts.

  3. Dust the surface with ground walnuts, then roll the mixture into a log. Gently flatten the dough with your palm to finger width, then shape it into a large rectangle, smoothing the edges with a knife. The bars should measure 6×1 cm.

  4. Repeat the process with the second portion of dough.

  5. Brush both dough portions with the remaining beaten egg white and smooth them out.

  6. Using a sharp knife, cut the dough into bars 1 cm thick.

  7. Arrange the bars on a baking sheet lined with parchment paper. If any bars lose their shape, adjust them with a knife.

  8. Place the bars in a preheated oven at 80 °C and allow them to dry for 80–90 minutes.

  9. Allow them to cool.

  10. Serve.

Buon appetito!

NOTE:
  • The process remains consistent for the second and third recipes, with variations only in the ingredients. For the third recipe, once the bar is baked, cooled, and dry, embellish it with melted chocolate over the white glaze.

  • Refrigerate the mixed ingredients for the bars for 30 minutes to allow them to firm up, making them easier to handle. Alternatively, you can freeze the mixture for 10–15 minutes.

  • Store the bars in a lidded container in a dry location.
