Ingredients: 22 cm round springform, simple, total time: 60 min. + standing

Bark:

  • 300 g of ground plasma biscuits

  • 110 g melted butter

  • 120 ml of milk


Cream:

  • 600 g Mascarpone

  • 6 Tbsp powdered sugar

  • 100 g of white chocolate/ or 5 Tbsp condensed milk

  • 200 ml sweet cream


Blueberry cream:

  • 300 g of blueberries

  • 40 g granulated sugar

  • 1 sheet of gelatin


Decoration:

  • 250-400 ml whipped cream

  • green + red color/ optional

  • few blueberries

  • few mint leaves

Preparation:

Bark:

  1. Place the ground plasma biscuit in a bowl, incorporate the melted butter, and gradually add milk, mixing until a uniform consistency is achieved.

  2. Line the mold with baking paper, pour in the mixture, and use a glass to level it evenly.

  3. Transfer the mold to the refrigerator.


Cream:

  1. In a large bowl, use a mixer to blend the mascarpone with the powdered sugar.

  2. Gently melt the white chocolate or condensed milk using a microwave or stovetop method.

  3. Whip the sweet cream until it forms stiff peaks, then incorporate the melted chocolate or condensed milk.

  4. Carefully combine both mixtures using a spatula. Set aside.


Blueberry cream:

  1. Dissolve the gelatin in a small amount of water and allow it to sit for 10 minutes to swell.

  2. Place the washed blueberries in a saucepan, add sugar, and stir over low to moderate heat.

  3. Once the mixture is uniform, incorporate the gelatin and stir until the sauce thickens, then remove from heat.


Assambling cake:

  1. Alternate the layers of filling, beginning with the blueberry filling followed by the white filling, and continue this pattern until all the ingredients are utilized. Ensure that the layers are arranged in such a way that the creams intermix.


Cooling:

  1. After completing the layering of the cream, allow the cake to cool for a minimum of 1 hour.


Decoration:

  1. Once the spinning time is complete, beat the whipped cream until stiff peaks form. Spread it over the cake and smooth with a knife. Garnish with the remaining blueberries and mint leaves as desired.

  2. Place the cake back in the refrigerator to allow it to set fully overnight.
