Ingredients for the Dough
To create this scrumptious cake, you will need a selection of ingredients that are likely already in your pantry. Here’s what you’ll need for the dough:
- Flour 00 and All-Purpose Flour: These two types of flour provide the perfect texture for the cake, ensuring it is both light and fluffy.
- Eggs: Essential for binding the ingredients together and adding richness to the cake.
- Sugar: This sweetener will enhance the flavor and provide the necessary sweetness to balance the other ingredients.
- Baking Powder: A crucial leavening agent that helps the cake rise and achieve that desirable airy consistency.
- Lemon: Fresh lemon juice and zest will infuse the cake with a bright, citrusy flavor that complements the sweetness beautifully.
- Cinnamon: This warm spice adds depth and a comforting aroma, making each bite a delightful experience.
- A Pinch of Salt: This enhances the overall flavor profile, bringing out the sweetness and balancing the cake’s taste.
- Blueberries: Fresh or frozen blueberries add bursts of juicy flavor and a lovely color to the cake, making it visually appealing.
- Milk: This moistens the batter, contributing to the cake's tenderness.
- Butter or Oil: Either fat source will enrich the cake, imparting a deliciously moist texture.
Ingredients for the Streusel Topping
To elevate this cake even further, you can add a delectable streusel topping that adds a delightful crunch and an extra layer of flavor. For the streusel, you will need:
- Flour: This forms the base of the streusel, providing structure.
- Brown Sugar: This adds a rich, caramel-like sweetness that pairs perfectly with the other ingredients.
- Cinnamon: Just like in the cake, cinnamon enhances the flavor of the streusel, creating a harmonious blend.
- Butter: This ingredient helps bind the streusel together while providing a rich flavor.
- Walnuts: Chopped walnuts add a satisfying crunch and a nutty flavor that complements the sweetness of the cake.

With its fantastic flavor, delightful fragrance, and quick preparation time, this cake is an excellent addition to your baking repertoire. The combination of fresh ingredients, along with the option to customize the quantities, makes it a versatile choice for any occasion. Ingredients: simple, total time: 30 min, 9 servings
For the Blueberry Cake:
95 g all-purpose flour
95 g flour 00
100 g granulated sugar
1 Tbsp baking powder
1 tsp ground cinnamon
1/2 tsp salt
280 g fresh blueberries/ or frozen. If using frozen, do not thaw
1 lemon zest
120 ml + 1 Tbsp non-fat milk/ or milk of choice
1 large egg
1/4 cup unsalted butter/ or oil
For the Crumb Streusel Topping:
30 g all-purpose flour
50 g brown sugar
1/2 tsp cinnamon
2 Tbsp cold butter/ diced
30 g walnuts/ chopped
Preparation:
Blueberry cake Dough:
In a large bowl, combine all the dry ingredients. Add the blueberries and grated lemon zest, mixing thoroughly.
In a separate bowl, blend all the wet ingredients. Once well combined, incorporate them into the dry ingredients, gently mixing with a spatula until the mixture is smooth and uniform.
Be careful not to press too hard during mixing to prevent the blueberries from releasing their juice.
Coarsely chop the walnuts.
After completing this step, proceed to prepare the cake topping.
How to make Streusel Topping?
Stir together flour, granulated sugar, brown sugar, and a little salt.
Melt your butter, but let it cool enough so that it doesn't feel hot to the touch, or it could melt the sugar and make your Streusel greasy. ...
Use a fork to toss the ingredients until all the flour has been absorbed.
Then add the chopped walnuts and stir gently.
Cake processing:
Lay the dough in a baking tray mold (20 x 20 cm), flatten, then pour the streusel topping
Bake the cake in a preheated oven at 220 °C for about 20–25 minutes, until golden brown.
Check the dough with a toothpick in the center to see if it’s done; if the toothpick is clean, it means the dough is done!
Leave the cake to cool.
Cut into cubes and serve.
Buon appetito!

NOTE:
Vegan advice:
For a dairy-free Blueberry crumble cake, use almond milk or soy milk in place of the regular milk and swap canola oil in place of the butter.
Another piece of advice I would give is:
Prepare the dough with blueberries and topping.
Store the dough in the refrigerator in the pan in which you plan to bake it, and pour it at room temperature.
Before baking, let stand at room temperature for at least 15 minutes.
Sprinkle with the topping, then bake according to the instructions!
Storage:
First, keep the cake at room temperature covered with a clean cloth, then store it in a dark, cool place.
