300 ml coconut milk (or optional)
3 Tablespoons chia seeds
3 Tablespoons coconut flour
2 Tablespoons honey
fruits of your choice -mango, banana, berries etc.
Preparation:
Mix milk, chia seeds, coconut and honey.
Refrigerate for a couple of hours, preferably overnight.
Before serving, remove from the refrigerator and leave briefly at room temperature while preparing the fruit purée.
Blend the selected fruit with a stick mixer (add a little honey if necessary, if you use sour fruit.
Instead of mashed fruit, you can also chop it finely and use it as such.
Put a layer of pudding in serving cups or bowls, then a layer of fruit purée, then a layer of pudding and finish with chopped fruit and sprinkle with coconut.
You can consume immediately or return to the refrigerator until serving.
