3 larger potatoes/ or 300-400 g boiled
200 g canned boiled sweet corn
400 g chicken white meat/ cut on cubes
200 g mushrooms fried/ cut on slices
100 ml of mayonnaise
100 ml of sour cream
salt and pepper to taste
a little lemon juice
fresh parsley chopped
Preparation
Boil the potatoes with their skins on for approximately 27-30 minutes. Allow them to cool, then peel and dice them.
Dice the chicken breast and briefly fry it in olive oil until it turns golden brown.
Clean and wash the mushrooms, slice them, and fry them in the same olive oil used for the chicken until the liquid evaporates.
Combine the potatoes, fried chicken, mushrooms, and sweet corn.
Dressing
Combine all dressing ingredients: mayonnaise, sour cream, lemon juice, salt, and pepper.
