Coconut biscuits

  • Coconut biscuits are simple, quick, and easy to prepare. They are exceptionally delicious and pair wonderfully with morning coffee or tea. Please follow the recipe for best results.

Ingredients: simple, total time: 40 min.
  • 260 g flour

  • 120 g sugar

  • 150 g coconut flour

  • 150 g butter

  • 1 full Tbsp Philadelphia

  • 1 egg

  • 1 bag vanilla sugar/10 g

  • powdered sugar for sprinkle

Preparation:
  1. Whip the butter until it becomes foamy, then incorporate the sugar and vanilla sugar, beating until a creamy consistency is achieved. Add the egg and Philadelphia, and mix thoroughly.

  2. Gradually incorporate the flour and lemon juice, continuing to beat simultaneously.

  3. Once a compact dough is formed, shape it into a ball and wrap it in plastic wrap. Refrigerate for 30 minutes.

  4. After 30 minutes, remove the dough from the refrigerator.

  5. Use a small spoon to portion the dough, shaping it into a ball, then into a crescent shape. (Each ball should be slightly larger than a walnut.)

  6. Alternatively, roll the dough out with a rolling pin to a thickness of 5-7 mm and cut out shapes using a cookie cutter.

  7. Carefully separate the biscuits with a knife and arrange them with space between each on baking paper in a baking tray.

  8. Bake in a preheated oven at 180 °C for approximately 12–13 minutes.

  9. Coat the finished rolls or biscuits in powdered sugar.

  10. Serve and enjoy!

  • These biscuits must be lighter, they must not get in the way.

  • Keep in an airtight box with a lid for up to 7-8 day.
