Ingredients: simple, total time: 30 min. 2 serving

For the Steak Bites:

  • 400 g beef steak/ cut into thick strips or bites size, ( also can use chicken meat, turkey meat)

  • 1 Tbsp Olive oil EVO

  • 20 g butter

  • 2 cloves of garlic/ minced

  • 1 tsp red ground paprika

  • 1/2 tsp chili flakes

  • 1/2 tsp oregano

  • 1 tsp of salt

  • 1/2 tsp black pepper

  • 1 Tbsp dry parsley


For the Creamy Parmesan Pasta:

  • 230 g "Garofalo" ravioli stuffed with Porcini and Truffles/ or Tagliatelle

  • 2 Tbsp butter

  • 2 cloves of garlic/ minced

  • 200 ml cooking cream

  • 100 ml milk

  • 35 g grated Parmesan cheese

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/4 tsp red pepper flakes

  • 1 Tbsp fresh parsley/ finely chopped

  • For Tagliatelle 120 g sautéed mushrooms/ optional

Preparation:

Pasta:

  1. Prepare salted water in a medium saucepan for cooking the pasta. Once the water reaches a boil, add the pasta and cook according to the package instructions. After cooking, drain the pasta and set it aside. This process should be done concurrently with the preparation of the Parmesan sauce.

  2. NOTE: You may use either fresh or regular tagliatelle, or mushroom-stuffed ravioli. If choosing tagliatelle, you may incorporate 120 g of stewed button mushrooms, sliced into strips, into the sauce.


Preparation of Steaks:

  1. Dry the meat thoroughly using a kitchen towel.

  2. Place the meat in a deep bowl and add a small amount of oil, paprika, salt, pepper, oregano, and basil. Mix all the ingredients thoroughly.

  3. Add the seasoned meat to a deep wok pan and fry until it is golden brown on all sides.

  4. Near the end of cooking, incorporate the chopped garlic, chili flakes, and chopped parsley. Mix well and then turn off the heat.

  5. Remove the meat from the pan along with the sauce, and slice it into finger-thick strips or bite-sized pieces. Cover the plate.

  6. Retain the fat remaining in the pan.


Preparation Parmesan sauce:

  1. In the same pan, add the butter and allow it to melt over low to moderate heat.

  2. Immediately incorporate the chopped garlic, stirring for about 10 seconds. Then add the red pepper flakes, cooking cream, and milk. Mix swiftly and season with salt and ground black pepper. Stir thoroughly until the mixture is uniform, approximately 5 minutes.

  3. (If using tagliatelle, sauté the sliced mushrooms separately.)

  4. Finally, add the grated Parmesan cheese, stir well, and cook for 1 minute. Add the strained ravioli and sprinkle with parsley, mixing well. Turn off the heat.

  5. Serve immediately while warm on a shallow plate.

NOTE:

Ingredients for 4 servings:

  • Make sure you make as much as you need, for ravioli and tagliatelle you need 460 g for 4 people and 800 g for steak. Pasta is not recommended to stand overnight like risotto. For the sauce, you need 400 ml of cooking cream and 6 spoons of grated parmesan cheese. Double the spices as well as the herbal spices.
