Lazy Pie Old way

  • Lazy apple pie is a timeless dessert that we often return to. It is simple to prepare, and I encourage all novice homemakers to try this classic grandmother's recipe. Please follow the recipe.

Ingredients: 1 cup measure = 200 ml, simple, total time: 60 min.

Biscuit:

  • 6 medium eggs/ separated

  • 1 cup of milk

  • 1 cup of oil

  • 3 and 1/2 cup of flour

  • 1 bag and half baking powders/ 15 g

  • 1 lemon peel/ grated

  • 1 and 1/2 cup of granulated sugar

  • Baking dish 25 × 40 cm


Filling:

  • 1 kg of apples/ grated

  • cinnamon to taste

  • 1 bag vanilla sugar/ 10 g

  • 5 Tbsp of granulated sugar

  • 80-100 g breadcrumbs


Other:

  • 6 Tbsp of homemade marmalade/ plums or apples

  • powdered sugar for sprinkling

Preparation:
  1. Separate the egg whites from the yolks.

  2. Whisk the egg whites with half of the sugar until stiff peaks form.

  3. Beat the egg yolks with the remaining sugar until the mixture is lighter and thick. Add grated lemon zest and mix again. Set aside.

  4. Combine the flour and baking powder in a deep bowl.

  5. Gently fold the yolk mixture into the beaten egg whites using a spatula, employing an upward folding technique.

  6. Gradually incorporate the flour mixture, milk, and oil, gently combining everything with a spatula.

  7. Once the mixture is well combined, divide it into two equal portions.

  8. Pour one portion into a greased and lightly floured baking pan.

  9. Bake in a preheated oven at 180 °C for exactly 10 minutes.

  10. Meanwhile, wash and grate the apples.

  11. Mix the grated apples with sugar, vanilla sugar, cinnamon, and 100 g of breadcrumbs.

  12. Remove the partially baked sponge cake from the oven and spread it with either homemade or store-bought plum or apple marmalade.

  13. Spread the grated apple filling over the marmalade and cover with the remaining batter.

  14. Even out the surface with a spoon.

  15. Return to the oven for an additional 25–30 minutes until nicely browned. If necessary, cover with aluminum foil 10–15 minutes before the end to prevent the top from burning.

  16. While the cake is baking, rotate the pan.

  17. Serve the cake dusted with powdered sugar.

NOTE:
  • Rather than using plum jam, I opted for apricot jam. Alternatively, figs, apples, or strawberries can be added.
