Recipe for Serbian Kebabs and How They Are Made

  • Serbian kebabs, known as ćevapčići, are a beloved dish in Serbian cuisine and are often enjoyed at gatherings, barbecues, and family meals. This recipe outlines my personal mixture for creating these delicious kebabs, which are not only flavorful but also incredibly satisfying. The process of making ćevapčići is straightforward, and the end result is a dish that is sure to impress anyone who tries it.

Ingredients

To prepare these delectable kebabs, you will need the following ingredients:

- Ground Meat: A combination of beef and lamb works best for a rich flavor. You can use about 500 grams of ground beef and 250 grams of ground lamb.

- Onion: One medium-sized onion, finely chopped or grated. This adds moisture and sweetness to the meat.

- Garlic: 2-3 cloves of garlic, minced. Garlic enhances the overall flavor profile of the kebabs.

- Paprika: 1 tablespoon of sweet paprika for a touch of color and flavor.

- Salt and Pepper: To taste, typically around 1 teaspoon of salt and ½ teaspoon of black pepper.

- Baking Soda: ½ teaspoon of baking soda, which helps to tenderize the meat.

- Water: About 100 ml of cold water to keep the mixture moist and to help bind the ingredients together.

- Optional Spices: You can also add a pinch of cayenne pepper or chili flakes if you prefer a bit of heat.

Preparation Steps

1. Mixing the Ingredients: In a large mixing bowl, combine the ground beef and lamb. Add the finely chopped onion, minced garlic, paprika, salt, pepper, and baking soda. Gradually pour in the cold water while mixing the ingredients. It’s best to use your hands to ensure everything is well incorporated. The mixture should be sticky but not overly wet.

2. Chilling the Mixture: Once the mixture is well combined, cover the bowl with plastic wrap and let it chill in the refrigerator for at least one hour. This resting period allows the flavors to meld together and helps the mixture firm up, making it easier to shape the kebabs.

3. Shaping the Kebabs: After chilling, remove the mixture from the refrigerator. Wet your hands with a little water to prevent sticking, and take a small amount of the mixture to form into small, finger-sized sausages, typically about 10 cm long and 2 cm thick. Make sure they are uniform in size for even cooking.

4. Grilling the Kebabs: Preheat your grill or barbecue to medium-high heat. If using wooden skewers, soak them in water for about 30 minutes to prevent burning. Place the ćevapčići on the grill, ensuring they are not overcrowded. Cook for about 4-5 minutes on each side, or until they are nicely browned and cooked through. You can also pan-fry them in a skillet over medium heat if grilling is not an option.

5. Serving Suggestions: Once cooked, remove the kebabs from the grill and let them rest for a few minutes. Serve them hot, accompanied by traditional sides such as flatbread, chopped onions, and a side of ajvar (a roasted red pepper condiment). A fresh salad or grilled vegetables can also complement the dish beautifully.

Conclusion

  • This recipe for Serbian kebabs, or ćevapčići, is a delightful way to bring a taste of Serbia to your kitchen. The combination of spices and the careful preparation ensures that each bite is packed with flavor. Whether you are hosting a summer barbecue or simply looking to enjoy a hearty meal, these kebabs are sure to be a hit. Enjoy the process of making them and savor the delicious results!

  2. Form the mixture into balls, then flatten them to a thickness of 1 cm.

  3. Cook on a grill or in a pan with a small amount of oil.

  4. Serve with freshly chopped onions, cream cheese, ajvar, salads, and baked potatoes.

Buon appetito!

NOTE:
  • You can use breadcrumbs instead; an old 1 piece of bread soaked in water and drained can also be used! If you add bread, there is no need to add water, because it is already in liquid!

  • Keep the kebab mixture overnight, covered for 1 day; that way it will absorb all the ingredients and it will be even tastier.
