Ingredients: simple, total time: 1h 5 min., 4 - 6 servings

For Vegetables:

  • 2 medium zucchini/ cut into 3mm rings and then halved or 1 eggplant cut into cubes

  • 1 large gold onion/ cut into ribs

  • 3 large peppers/ yellow, green, red/ cut into thin strips

  • 400 g of button mushrooms/ cut into 5 mm thick sheets

  • 1/2 head of garlic

  • Olive oil EVO to taste

  • salt and pepper to taste


Dressing:

  • 250 g Greek yogurt

  • 1 Tbsp of mustard

  • 1 Tbsp of vinegar/basilic or apple cider vinegar

  • 1 Tbsp of soy sauce

  • 3 Tbsp of sesame seeds/ fried- optional

  • 2 Tbsp of fresh parsley/chopped parsley

  • 2 Tbsp of Olive oil EVO

  • 1/2 head of garlic/ roasted and blended

  • salt and pepper to taste

Preparation:

Preparation Vegetables:

  • Thoroughly wash all the vegetables. Slice the zucchini, keeping the skin on, into rings and then halve them. Salt the zucchini, mix well, and place them on a plate. (For eggplant, cut it into smaller cubes.)

  • Remove seeds and stems from the peppers, then slice them into thin strips.

  • Slice the onion into wedges and halve the garlic cloves.

  • For the mushrooms (I used brown champignons), clean them of any impurities, then slice them into 5 mm pieces. If the mushrooms are smaller, simply halve them.


Prepare a baking tray by lining it with parchment paper, and arrange the following:

  • A row of zucchini or eggplant,

  • A row of peppers,

  • A row of mushrooms.

  • Finally, place half a head of garlic between the rows.

  • Season with salt and pepper to taste, then drizzle olive oil over all the ingredients.


Baking:

  1. Preheat the oven to 180°C and bake for approximately 35-40 minutes. After 25 minutes of baking, incorporate all the vegetables by stirring them in.

  2. Once the baking time is complete, remove all the vegetables and allow them to cool.

  3. After cooling for 10 minutes, transfer the vegetables along with the juices to a large salad bowl.

  4. Meanwhile, sauté the onion in a minimal amount of olive oil, aiming for caramelization by stirring every 3 minutes.

  5. When the onions have browned, add 50 ml of water to further soften them, and simmer until the liquid has evaporated.

  6. Remove from heat and add the onions to the salad bowl.

  7. Proceed to prepare the dressing for the grilled vegetables.


Dressing:

  1. Extract the garlic from its shell and incorporate it into the blender with olive oil, blending until a creamy consistency is achieved.

  2. In a medium-sized deep bowl, combine Greek yogurt, mustard, one tablespoon of olive oil, vinegar, and soy sauce. Then, add the blended garlic and chopped parsley.

  3. Taste the mixture and adjust the seasoning as desired. Ensure all ingredients are thoroughly mixed.


Combine ingredients with Dressing.

  1. Incorporate the dressing into the grilled vegetables.

  2. Optionally, you may enhance the flavor by adding toasted sesame seeds. Ensure all ingredients are thoroughly mixed.

  3. Allow the mixture to cool for approximately 15-20 minutes before serving.

  4. These grilled vegetables, complemented by yogurt dressing, pair excellently with steak, rump steak, roast beef, roasted chicken, turkey schnitzel, and pork chop.

NOTE:

Advice and Tips:

  • For a richer and more diverse vegetable selection, consider combining them with carrots or fennel. Peel the carrot and boil it for 10-15 minutes. Once cooked, slice it into thin rings or julienne strips. Slice the fennel into ribs and cook alongside the carrot for approximately 7 minutes. Incorporate the carrots and fennel with other vegetables.

  • Toast the sesame seeds without oil for about 5 minutes, stirring continuously until they achieve a golden brown hue. If you have a preference for sesame, feel free to add an extra spoonful.

  • If you prefer to avoid dairy products like yogurt, or if they cause discomfort, you can simply drizzle olive oil and a little vinegar, then add parsley and spices at the end and mix well.

  • This cooking method yields a delicious salad with minimal olive oil, making it suitable for weight-loss purposes.

  • The grilled salad can be stored in the refrigerator for to 2 days with the dressing, or to 3 days without the dressing.
