## Versatile Grilled Vegetables: A Perfect Summer Side Dish
I love it most when summer comes, and I prepare light things that go well with any dish. One of those is grilled vegetables, which literally go as a side dish with all meat and fish dishes and other side dishes. For this recipe, you won't need a lot of vegetables: one onion, one zucchini, one eggplant, and one pepper. In addition to being tasty, it is also very economical. Follow the recipe.
Ingredients: simple, total time: 45 min. 3-4 serving
2 Tbsp Olive oil EVO
1 onion / cut into ribs
2 small green zucchini/ cut into half end chopped
1 red bell pepper/ cut into strips and halved
1/2 small eggplant/ diced in small cubes
salt and black pepper to taste
Preparation:
Wash all vegetables under hot water.
Remove the stem from the eggplant and cut it in half, then cut it into slices about 5 mm thick.
Salt them on both sides and let them rest for 15 minutes to drain their liquid.
During this time, peel the onion and cut it into halves, then the ribs.
Cut the pepper in half, remove the seeds and cut into long strips, then cut in half.
Cut the zucchini in half lengthwise, then cut them into slices 4-5 mm thick.
When you have prepared all the vegetables, heat the olive oil on low to moderate heat. I used a steel pan.
Add the chopped onion to the ribs in the heated oil and simmer for about 5 minutes, stirring occasionally.
When the onion has softened and caramelized a little, add the prepared peppers and zucchini, season with salt and black pepper to taste, cover and simmer for about 10 minutes, stirring occasionally.
During this time, cut the eggplant into smaller cubes.
After the spinning time, add chopped eggplant.
Cover the pan and simmer for about 20 minutes, stirring the vegetables every 10 minutes.
Remove the lid, mix for another 10 minutes. I prefer more crispy vegetables, and if you want, you can extend the cooking by about 5 minutes.
You can enjoy these grilled vegetables with grilled fish. Squids, grilled meat or as a side dish.

NOTE:
If you like, you can add one small carrot, finely chopped parsley, and chopped garlic to this grilled vegetable.
Keep the rest of the grilled vegetables covered in the refrigerator for up to 2 days.
