  • Find out how a simple mixture of apple cider vinegar and mineral water makes meat irresistibly juicy and tender.

  • If you've ever been disappointed when you take a roast out of the oven to find it hard and dry, you're not alone. Although it seems like a simple dish at first glance, baking it perfectly is a real little culinary skill. The good news is that there is a solution - and it's hiding in one food item that you probably already have in your kitchen.

Why does baking often not turn out right?
  • Many invest money in quality meat and carefully choose spices, but the result is still missing. The most common problem is that the meat loses moisture during roasting and becomes tough. The mistake is not in the recipe, but in preparation.

  • Experienced butchers claim that the key is not in the spices, but in the way the meat is prepared before it is even put in the oven. Forget about complicated marinades. The secret is in the combination of apple cider vinegar and mineral water.

Ingredients: simple, time depending of weight of meat
  • lamb or pork meat

  • 100 ml of apple cider vinegar

  • 200 ml of acidic mineral water

  • 2 Tbsp of salt

  • rosemary sprigs for pork meat

  • thyme, sage, garlic leaves for lamb meat

  • salt as needed

  • water/ or beer, broth, oil for topping

  • for coating baking dish, use oil or grease

Preparation:
This mixture operates in two primary ways:
  1. Vinegar softens the meat fibers.

  2. Mineral water enhances the liquid's penetration depth.

  3. The outcome is meat that retains its juices and remains tender, even after extended roasting.

  4. Thoroughly coat the meat or immerse it in this solution, allowing it to stand for at least two hours. An optimal effect is achieved if left overnight in the refrigerator.

  5. Prior to baking, gently pat the meat dry with a towel to achieve a crispy crust.

  6. After preparing and coating the meat with this mixture, brush it with oil and salt it again moderately after some time.

  7. A common error is starting the baking process at excessively high temperatures.

  8. Begin baking at approximately 150°C.

  9. Keep the meat covered for several hours, depending on its weight. For instance, a 1 kg piece should bake for 1 hour, while a 2 kg piece should bake for 2 hours. Turn the meat every 35-40 minutes during baking.

  10. Towards the end of the baking process (about 30 minutes remaining), increase the temperature to 180-200°C and remove the lid.

  11. This method ensures a perfect balance: tender on the inside and golden on the outside.

  12. During roasting, you may occasionally baste the meat with cold beer and a sprig of rosemary if preparing a pork roast. This technique provides ideal caramelization, a subtle aroma, and an irresistible crunch. A bit of broth can be used for both types of meat.

  13. For lamb, it is best to use sage and make a few incisions in the meat to insert garlic leaves.

  14. Once the roast is removed from the oven, refrain from cutting it immediately.

  15. Although tempting, it is crucial to allow the meat to rest, covered, for 15-20 minutes.

  16. During this resting period, the juices distribute evenly and remain within the meat. Omitting this step can undermine all your efforts.

  17. The true secret to perfect meat lies not in spices or costly techniques, but in the simple preparation steps before roasting and careful cooking. A bit of patience and a few key ingredients distinguish ordinary meat from irresistibly juicy meat.
