Olive oil EVO to taste
1 large onion/ cut into ribs
6 green peppers/ 1/2 diced other 1/2 cut into strips, can be yellow or red paprika
4 medium tomatoes/ chopped
150 ml tomato sauce pesto
6 eggs
1 tsp red ground paprika
1 tsp cumin seeds/ optional
salt and pepper to taste
1-2 Tbsp fresh parsley as you like
Preparation:
Sauté the chopped onion with the ribs over low to moderate heat until it becomes translucent. Add the chopped peppers, stir for a few minutes, then cover and let it simmer for approximately 7 minutes.
Incorporate the chopped tomatoes into the mixture, season with cumin, ground red paprika, salt, and black pepper to taste, and cover. Allow it to simmer for about 10 minutes.
