A mild version of rice, for instance, can serve as a neutral base that absorbs the savory sauce beautifully. Alternatively, creamy mashed potatoes provide a comforting and velvety texture that pairs wonderfully with the pork. Polenta, with its smooth and slightly sweet profile, can also be a fantastic accompaniment, adding a rustic touch to the meal. For those seeking a healthier option, grilled salads or sautéed broccoli can add a fresh and vibrant contrast, balancing the richness of the pork fillets.
Ingredients for a Flavorful Dish
To prepare this exquisite dish, gather the following ingredients: lean pork fillet, which should be cut into 1 cm pieces to ensure even cooking and tender bites; flour, used to lightly coat the pork for a subtle crunch; a selection of fresh mushrooms, which will add depth and umami to the sauce; flavorful porcini broth, which serves as the foundation of the sauce; aromatic garlic, which infuses the dish with its robust fragrance; a splash of wine, which enhances the overall flavor profile; fresh thyme, adding a hint of herbal brightness; and salt and pepper to taste, which will help to round out the flavors.
Simple and Quick Preparation
The preparation of this dish is both simple and quick, making it an ideal choice for a busy Sunday or a family lunch. Start by lightly dusting the pork pieces in flour, which will help create a lovely golden crust when seared. In a hot skillet, sear the pork until golden brown, allowing the natural juices to develop. Once the pork is cooked, add in the garlic and mushrooms, sautéing them until fragrant and tender. Pour in the porcini broth and a splash of wine, allowing the mixture to simmer and reduce, creating a rich and flavorful sauce that envelops the pork. Season with fresh thyme, salt, and pepper to taste, ensuring that every bite is bursting with flavor.

1 Tbsp fresh parsley/ finely chopped
As side dish:
Broccoli, puree, rice or polenta
Preparation:
Begin by preparing all the ingredients as outlined above.
Preparation fillets:
Slice the pork fillet into 1 cm thick pieces and season with salt and pepper according to preference. Coat the fillets evenly with flour, ensuring to remove any excess.
Sauté the fillets in a pan with a small amount of oil until they achieve a golden brown color on all sides.
Transfer the fillets to a plate.
Preparation Sauce:
Begin by adding a small amount of oil to the pan and allow it to heat over low to moderate heat.
Once the oil is hot, add the chopped mushrooms, seasoning with salt and pepper to taste, and cover the pan.
Sauté the mushrooms until most of the liquid has evaporated, leaving a small amount in the pan.
Add the chopped garlic, stir for approximately 30 seconds, then pour in the wine and cover the pan.
Simmer for approximately 5 to 7 minutes until the alcohol has evaporated.
Incorporate 200 ml of Porcini mushroom broth, return the fillets to the pan, and allow them to cook for about 10 to 15 minutes, covered, over low to moderate heat. Season with thyme, salt, and pepper according to taste during this period.
Combine the remaining broth with 2 teaspoons of the leftover flour, add it to the mixture, and stir well. Continue cooking on low heat for an additional 10-12 minutes.
Your dish is now ready to be served warm with a side of your choice. I opted for a lighter option with broccoli.

NOTE:
Tips and Advice:
The wine during cooking will soften these steaks and give the perfect aroma to the Porcini broth.
Mashed potatoes, rice in a lighter preparation, and broccoli are the most suitable side dishes for this entrée.
If white wine is unavailable, you may substitute with beer. Allow the alcohol to evaporate before adding the broth.
I advise you to use Porcini because it gives the perfect flavor to the sauce with these mushrooms and steaks.
For broth I used half a Porcini cube. In case you don't have these Porcini cubes, you can replace them with beef or vegetable cubes for soups.
Marjoram or rosemary can be used as herbal spices in place of thyme.
Storage:
Store the remaining dish covered in the refrigerator.
Reheat the fillets in a pan or microwave.
