## Deliciously Filled: The Ultimate Stuffed Omelette Experience
A vegan stuffed omelet offers a delicious and nutritious breakfast option. Unlike a traditional omelet, this dish requires a medium pan, an assortment of vegetables, and mozzarella. It is easy to prepare and can be ready quickly. "Stuffed Omelette" is also the title of a lively, upbeat song celebrating the art of omelet filling. For those who prefer meat, adding two thin slices of ham is sufficient. This recipe serves two and takes just 25 minutes to prepare. Follow the recipe for optimal results.
Ingredients: simple, total time: 25 min., 2 servings
Olive oil EVO to taste
6 eggs
1 red pepper
1/2 leek/ finely chopped/ or spring onion
salt and pepper to taste
2 sheet ham as you like optional
1 mozzarella grated/ or to taste
dry parsley to taste
Preparation:
Prepare all the ingredients as described above.
Fry the leek and pepper in a little olive oil, then season to taste. Simmer for about 12 minutes, stirring occasionally.
Meanwhile, beat 3 eggs, add parsley and salt to taste.
Remove the stewed and softened vegetables from the pan.
Add a little oil and beaten eggs to the same pan, and reduce the heat. If you want, you can add 2 slices of ham, it's optional.
Add the vegetables on top of the grated mozzarella, cover. During this time, break in 3 more eggs and season to taste.
As soon as a little color has caught on the lower part of the eggs, pour evenly with beaten eggs and cover.
Wait for the upper part to harden.
Place a plate on it and turn it. With the help of a spatula, gently move the upper part to the bottom to bake until golden brown.
Serve warm with yogurt. or milk.

Instead of ham, you can add already fried bacon to this omelette. Instead of leeks, you can add spring onions.
