  • Olive oil EVO to taste

  • 6 eggs

  • 1 red pepper

  • 1/2 leek/ finely chopped/ or spring onion

  • salt and pepper to taste

  • 2 sheet ham as you like optional

  • 1 mozzarella grated/ or to taste

  • dry parsley to taste

Preparation:
  1. Prepare all the ingredients as described above.

  2. Fry the leek and pepper in a little olive oil, then season to taste. Simmer for about 12 minutes, stirring occasionally.

  3. Meanwhile, beat 3 eggs, add parsley and salt to taste.

  4. Remove the stewed and softened vegetables from the pan.

  5. Add a little oil and beaten eggs to the same pan, and reduce the heat. If you want, you can add 2 slices of ham, it's optional.

  6. Add the vegetables on top of the grated mozzarella, cover. During this time, break in 3 more eggs and season to taste.

  7. As soon as a little color has caught on the lower part of the eggs, pour evenly with beaten eggs and cover.

  8. Wait for the upper part to harden.

  9. Place a plate on it and turn it. With the help of a spatula, gently move the upper part to the bottom to bake until golden brown.

  10. Serve warm with yogurt. or milk.

  • Instead of ham, you can add already fried bacon to this omelette. Instead of leeks, you can add spring onions.
