1 Cuttlefish- 600 g/cleaned and cut in small pieces
Olive oil EVO to taste
3 medium cloves of garlic
130 ml dry white wine
2 Tbsp fresh parsley 8
3 San Marzano tomatoes/ chopped
10 small black olives/ cut into thin rings
170 ml Italian tomato passata sauce Rustico
150-170 ml water
300 g fresh Italian Tagliatelle
1 tsp oregano
1 tsp basil
salt and pepper to taste
for decoration: basil leaves, while olives
as desired grated Parmesan cheese
Preparation:
Preparing the Cuttlefish:
Thoroughly wash and clean the cuttlefish, discarding the head while retaining the tentacles and body intact.
Cut the remaining cuttlefish into smaller, preferred pieces and set aside.
Finely chop the garlic and dice the tomatoes.
Slice the olives into rings.
Preparation of Sauce for Tagliatelle:
Pour the olive oil into the frying pan and allow it to heat thoroughly over low to moderate heat.
Add the cuttlefish, cut into pieces, and season with salt and pepper. Stir for approximately 5 minutes.
Pour the white wine over the cuttlefish, add the chopped parsley, and mix well.
Cover the pan and cook for about 7 minutes, allowing the alcohol to evaporate.
Once the alcohol has evaporated, add the chopped tomatoes, mix thoroughly, cover the pan, and cook until the tomatoes soften and form a sauce.
When the tomato juice has developed, add the chopped olives, tomato passata, basil, oregano, and salt and pepper to taste. Mix well and add 100 ml of water.
Add the water gradually, in three separate additions.
Cook the cuttlefish and sauce for approximately 40-45 minutes, stirring occasionally.
Cooking Tagliatelle:
Near the end of the cooking process, add salted water for the pasta and allow it to boil for approximately 10 minutes.
Cook the tagliatelle for about 2-3 minutes if using fresh tagliatelle. For other types, follow the cooking instructions on the package.
Once the tagliatelle is cooked, reserve 3 tablespoons of the cooking liquid and drain the pasta thoroughly.
Finishing Sauce and combine Tagliatelle:
Once the sauce has thickened and developed a rich color, drain the liquid from the pasta and tagliatelle, and combine them thoroughly.
Serving:
Serve on shallow plates and garnish with a basil leaf and a whole olive. If desired, add grated Parmesan, but avoid mixing it thoroughly to preserve the cuttlefish's flavor.

In place of Italian passata sauce, canned tomato pulp or tomato concentrate from a tube can be used.
