  • 4 chicken thighs

  • salt and pepper to taste

  • chicken seasoning to taste - optional

  • 200 ml of cooking cream

  • 200 ml Porcini broth

  • 200 g of champignons

  • 2 large cloves of garlic/chopped

  • 1 tsp of mustard

  • oil for frying


For the Mashed Potatoes:

  • 4 large potatoes + cooking water

  • salt to taste

  • 20 g of butter

  • 170 ml of milk

Preparation

Mashed Potatoes:

  1. Begin by preparing the puree.

  2. Peel and clean the potatoes, rinse thoroughly, and cut them into smaller pieces.

  3. In a medium saucepan, combine the potatoes, a teaspoon of salt, and enough water to cover the potatoes by two fingers. Cook for approximately 30 minutes.

  4. Once the potatoes are tender, drain and mash them thoroughly with a fork. Immediately add salt and butter, mixing quickly until the butter has melted.

  5. Using a mixer, gradually incorporate milk while blending until a smooth, creamy consistency is achieved. The puree is ready; cover the bowl.

Chicken Thighs:

  1. Thoroughly rinse the chicken thighs and pat them dry with a kitchen towel.

  2. Debone the chicken, removing any excess skin and fat.

  3. Season each piece evenly with salt and pepper or chicken seasoning, according to your preference.

  4. Heat the oil over low to moderate heat and place the chicken pieces skin-side down to fry for approximately 10 minutes. Then, turn them over and continue frying for an additional 10 minutes until they achieve a golden brown color.

  5. Remove the chicken pieces from the pan.

Mushrooms:

  1. Slice the champignons thinly and finely chop the garlic.
