  • 2 pack salad frutta di mare - seafood, Mediterranean/ chopped cuttlefish, squid, octopus, mussels...

  • 300 ml cup of rice/ washed, and boiled

  • 830 ml water

  • 1 can of corn/ boiled 50 g - optional

  • salt and pepper to taste

  • Olive oil EVO to taste

  • 2 tsp dry parsley

  • 1 tsp dry basil

  • 2 lemon slices for serving

Preparation:

  1. Thoroughly rinse the rice under cold water until the water runs clear.

  2. Place the rice in a small pot, add 830 ml of water and a pinch of salt. Cook over low to moderate heat, stirring occasionally, until the rice is fully cooked and expanded, approximately 15-18 minutes.

  3. Once the rice is cooked, rinse it with cold water and allow it to cool in a colander for about 10 minutes.

  4. After the rice has cooled, transfer it to a salad bowl. Add two packets of Frutta di Mare, the drained cooked corn, parsley, basil, salt, pepper, and olive oil. Mix thoroughly.

  5. Refrigerate the salad for at least 30 minutes before serving.

  6. Serve on plates, garnished with lemon slices.
