Ingredients: simple, total time: 25 min., 2 servings

For the Scallops:

  • 10 large sea scallops

  • 1 Tbsp olive oil/ or vegetable oil

  • salt and black pepper to taste


For Butter sauce:

  • 2 Tbsp unsalted butter/ cold

  • 2-3 cloves of garlic/ minced

  • 1/4 chili flakes as desired

  • 1/2 juice of lemon/ 2 Tbsp

  • 2 Tbsp fresh parsley/ chopped

Preparation:
  1. Remove side muscle from scallops and pat completely dry. Let sit on paper towels 10-15 minutes.

  2. Season with salt and pepper just before cooking.

  3. Heat large skillet over medium-high to high heat for 3-4 minutes.

  4. Add oil and heat until shimmering.

  5. Sear scallops without moving for 2-3 minutes until golden brown.

  6. Flip and cook 2-3 minutes more until just done.

  7. Remove scallops and reduce heat to medium-low.

  8. Add garlic and cook 30 seconds until fragrant.

  9. Add cold butter and swirl to melt.

  10. Add lemon juice and parsley, swirling to combine, return scallops, simmer few seconds then turn off the heat.
