12 medium Scallops/ if are big cut in half, if are small no need to cut
1 egg
Olive oil EVO for frying/ or seed oil
1/2 tsp salt/ or to taste
1/4 tsp garlic powder
6 Tbsp breadcrumbs
Preparation:
Wash scallops in cold water, drain them with kitchen paper.
Garlic and salt add in breadcrumbs and stir in bowl.
Beat eggs well in another bowl.
Roll scallops in breadcrumbs then dip in scrambled eggs, roll them back in breascrumbs.
Breascrumbs should be evenly spread on the scallops.
Deep fry these scallops for 3 minutes, until golden brown. They should be white in the middle.
Place the scallops on kitchen paper to absorb excess fat before serving.
Serve with lemon and ketchup or hot sauce.
