Scallops simple way in a pan
  • This recipe for scallops is very quick and ready in just 15 minutes. Otherwise, I often make baked ones in the oven with crumbs or in a broth sauce with crumbs. This recipe is ideal for those who avoid long stays in the kitchen and breadcrumbs or don't have broth at home. Follow recipe.

Ingredients: simple, total time: 15 min., 2 serving
  • 8 scallops with shells

  • 60 g of butter/ or olive oil EVO

  • salt to taste

  • 1 lemon juice/ filtered /120 ml

  • 2-3 tsp flour

  • 1 tsp dry parsley for decoration

Preparation:
  1. The first thing you will do is to open the shell with the help of a small knife.

  2. Separate the mollusk from the orange part and put it aside. Remove the black part with a small, sharp knife.

  3. Wash the shells and mollusk under a stream of cold water, including the orange part of the mollusk, then dry well with a kitchen towel.

  4. Sprinkle a little salt on each mollusk.

  5. Now add 10 g of butter or 2 spoon olive oil to the pan and add the molluscs.

  6. When the butter is heated to low heat, fry each side for about a minute until they brown a little, then transfer them to a plate.

  7. Now clean the pan of impurities and put the rest of the butter at minimum temperature, wait until it melts well to low heat.

  8. When the butter is melted add gradually squeezed and filtered lemon juice, mix constantly with wire all well for about 4-5 minutes.

  9. Turn off the heat now and gradually add a 3 teaspoon of flour, mix with a wire well without lumps.

  10. Return the pan to the low heat, add now orange parts and fry about 1 minute, take them out, stir constantly until the ingredients thicken, about 4–5 minutes. Put out the fire.

  11. Transfer each mollusk in clean shell and add the orange part.

  12. Then add the dressing over the mollusk. Sprinkle with parsley if desired.

  13. Serve 4 pieces on each plate with slices of lemon and lettuce leaf.

  14. This dish is served as an appetizer before fish or seafood specialties.

NOTE:
  • If you want, you can add olive oil instead of butter, parsley at the very end or garlic if you really like it.

  • In this recipe, it's important to fry the mollusks briefly for about a minute and a half on low heat, and to stir constantly with a wire whisk when adding the lemon and flour, otherwise they may burn, and to keep the heat low.

  • You can add 100 ml of broth to this recipe, it will be even tastier!
