This time, however, I decided to prepare the moussaka in a slightly different way than the traditional recipes usually suggest. By adding a generous amount of Gouda cheese and a sprinkle of oregano, I aimed to create a unique flavor profile that enhances the dish's overall taste and texture. The creamy, melted Gouda adds a delightful richness, while the oregano introduces a hint of earthiness that complements the other ingredients beautifully.

Ingredients: baking dish 32 x22 cm simple, total time: 90 min. , 4-6 servings
1 kg potatoes / cut into thin circles 3-4 thickness mm
Filling:
500 g minced meat/ pork-beef
1 large onion / finely chopped
2 large carrots/ diced
3 large cloves of garlic/ minced
1 tsp salt/ or to taste
1/2 tsp black pepper/ or to taste
1 tsp bio dry spice Vegeta
1. 5 Tbsp allspice/ or to taste
2 Tbsp parsley leaves/ finely chopped or to taste
Dressing:
3 large eggs/ or 4 small
300 ml yogurt/ or sour cream
150 ml milk
1.5 tsp salt
1/2 tsp black pepper/ or to taste
1 tsp oregano/ or to taste
and:
30-50 g grated Gouda cheese/ for sprinkle as you like
Preparation:
Preparation of Ingredients:
Peel the potatoes and slice them into thin rings, approximately 3 mm thick. When you have cut the potatoes, leave them in water so that they do not turn black while standing while you make the filling.
Finely chop the onion and mince the garlic.
Peel the carrot and dice it into small cubes; alternatively, you may use a blender for this task.
Preparation of the filling:
Sauté the onion in hot oil in a large pan until it becomes soft.
Incorporate the minced meat and cook until it changes color, approximately 15 minutes.
Subsequently, add the blended carrot, chopped garlic, salt, pepper, and ground paprika. Stir thoroughly and cook briefly until the flavors meld, about 5-7 minutes. Retain some liquid in the mixture to ensure the moussaka remains moist and not dry.
Garnish with parsley leaves and turn off the heat.
Arrangement of moussaka:
In a greased pan measuring 32 x 22 cm or 33 x 20 cm, begin by arranging a layer of potatoes, followed by a layer of meat.
Continue layering the ingredients in this manner until they are all used, finishing with a layer of potatoes.
The final arrangement should consist of three layers of potatoes and two layers of filling.
Baking:
Bake the moussaka in a preheated oven at 200°C for approximately 40 minutes, until the potatoes are tender and lightly browned.
Meanwhile, whisk together the eggs, yogurt, milk, a pinch of salt, and oregano.
Remove the moussaka from the oven and evenly distribute the mixture over it. Gently shake the pan to ensure the mixture seeps into all the ingredients.
(Optionally, you may sprinkle a small amount of grated Gouda or any melting cheese over the top.)
Return the dish to the oven and bake for an additional 15-20 minutes, until a golden crust forms. (If your oven tends to cook more intensely, cover with aluminum foil after 12 minutes.)
Allow the moussaka to cool slightly before serving, and accompany with sour milk or Greek yogurt if desired.

NOTE:
This moussaka was prepared without tomato sauce, but you may add it according to your preference.
If you prefer a spicier dish, consider adding half a teaspoon of ground hot pepper.
If you like, you can add some finely chopped leek or red pepper to the moussaka filling, it will give an even richer taste.
The addition of grated cheese is optional and can be omitted if desired.
Trappist, cheddar, Edam, or mozzarella can be used as alternatives to Gouda cheese.
Watch the potatoes to thinly slice them as described in the recipe, it depends on whether the moussaka will be perfect! If you cut into thicker slices, it is possible that your potatoes will not be cooked well!
If you want, you can cook the potatoes that you cut beforehand for about 10 minutes on a low, moderate heat. That way the potatoes will be even softer.
Tips for the perfect moussaka:
Potatoes should be thinly sliced to ensure even baking.
For fattier cuts of meat, excess fat may be drained off.
To enhance flavor, a small amount of tomato puree can be incorporated into the meat.
Allow the moussaka to rest for 10-15 minutes after baking before slicing; this will facilitate easier serving.
How long can it stand?
Moussaka can be refrigerated for a period of 2 - 3 days.
It reheats exceptionally well, with many noting that its flavor enhances by the following day.
You can also freeze moussaka and pack special boxes with lids for up to 2 months. Before consumption, take out the moussaka and store it in the refrigerator. Heat the pan or microwave.
