Ingredients

To prepare this dish, you will need the following ingredients:

- Fresh Squid: Approximately 1 pound of cleaned squid, which should be cut into rings or left whole, depending on your preference. Fresh squid is ideal for this recipe, but frozen can also be used if fresh is unavailable.

- Tomatoes: You will need about 2 cups of ripe tomatoes, either fresh or canned. If using fresh tomatoes, consider using plum or Roma tomatoes for their rich flavor and low moisture content.

- Onion: One medium-sized onion, finely chopped, will add sweetness and depth to the sauce.

- Garlic: 3 to 4 cloves of garlic, minced, to provide a fragrant base for the sauce.

- Olive Oil: A few tablespoons of good-quality olive oil, which will be used for sautéing the ingredients and enhancing the overall flavor of the dish.

- Herbs: Fresh basil and parsley, finely chopped, to add freshness and a burst of color to the dish. Dried oregano can also be added for an additional layer of flavor.

- Red Pepper Flakes: A pinch of red pepper flakes for a hint of heat, which can be adjusted according to your spice preference.

- **Salt and Pepper**: To taste, for seasoning the dish perfectly.

Instructions

1. Prepare the Squid: If using fresh squid, clean and rinse it thoroughly under cold water. Remove the head, innards, and the quill, and then cut the body into rings. If using frozen squid, ensure it is fully thawed and drained.

2. Cook the Base: In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent and soft, which usually takes about 5 minutes. Stir in the minced garlic and cook for an additional 1 to 2 minutes, being careful not to let it burn.

3. Create the Sauce: Add the chopped tomatoes to the skillet, along with the red pepper flakes, salt, and pepper. If using canned tomatoes, crush them gently as you add them to the pan. Allow the mixture to simmer for about 10 to 15 minutes, stirring occasionally, until the tomatoes break down and the sauce thickens slightly.

4. Incorporate the Squid: Once the sauce has thickened, gently add the squid rings to the pan. Stir to coat the squid evenly with the sauce. Cook for an additional 5 to 7 minutes, or until the squid is opaque and tender. Be careful not to overcook the squid, as it can become rubbery.

5. Finish with Herbs: Just before serving, stir in the chopped fresh basil and parsley. This will add a vibrant freshness to the dish and elevate the flavors even further. Taste the sauce once more and adjust the seasoning if necessary.
