  • Since I am a passionate squid lover, I always look forward to preparing them during the warm summer months when fresh seafood is at its peak. The tender, delicate flavor of squid is not only delightful but also incredibly versatile, allowing for a multitude of cooking methods and flavor pairings.


  • This particular recipe stands out among the many I have tried, as it is one of the easiest and most economical ways to enjoy this delicious seafood. My partner, Paolo, absolutely adores this dish, which makes it even more special for me to prepare.

  • Start by cleaning the squid thoroughly, removing the innards and cartilage, and then slicing them into rings or leaving them whole, depending on your preference. Marinate the squid in olive oil and minced garlic for at least 30 minutes to allow the flavors to meld beautifully. Once marinated, you can either grill, sauté, or even bake the squid to achieve that perfect tenderness. Cooking squid requires a delicate touch, as overcooking can make it rubbery. Aim for a cooking time of just a few minutes until the squid turns opaque and slightly golden.

  • 500 g of squid, fresh and washed and cleaned

  • oil for frying

  • 1/2 tsp salt

  • 150 g smooth flour, 00

Preparation:
  1. Clean the inside of the carcass head and cartilage and rinse and drain well.

  2. Cut the cleaned squid into rings, pour them into a deeper bowl and add 1/2 teaspoon of salt and mix them well.

  3. Pour a lot of oil into a deeper pan or if you have a fryer even better.

  4. Wait for it to heat up well. During which time mix all the squid rings into smooth flour or flour 00, on all sides and shake them well from the excess flour, then put them in hot oil to fry, turning them occasionally.

  5. When they are yellowish, take them out of the pan and put them on kitchen paper to absorb the excess oil. It all goes easier with the fryer, there is no turning, you just wait a few minutes and pull it out immediately.

  6. As a side dish, you can serve with boiled chard, boiled and baked potatoes, potato salad with onions, see the recipe here!

  7. Serve hot immediately.
