Big Squids in Sauce of Wine

A wonderful and delicious big squid dish ready in just 20 minutes, better than in a restaurant in a wine sauce, parsley and garlic sauce. This Mediterranean and quick dish goes fantastically with boiled potatoes with Swiss chard, see the recipe here. The recipe is very simple and quick. Follow the recipe.
Ingredients: simple, total time: 20 min., 2 serving
little Olive oil EVO
700 g squids/ cleaned and separated heads
salt and black pepper to taste
2–3 big cloves of garlic/ minced
150 ml dry white wine
2 full Tbsp fresh parsley leaves - finely chopped
Preparation:
Wash and clean the squid from the inside, remove the heads.
Season the squid with pepper and salt to taste, including the heads.
Dry the squid with a kitchen paper and heat the little olive oil in a large pan to moderate heat.
First, fry the squids in olive oil, until golden brown (if are smaller 2–3 minutes, if are bigger like mine 4–5 minutes) on both sides, remove from the pan and place on a plate.
Then add the heads and fry the same until golden and place on a plate.
In the same pan, add 2-3 spoon olive oil, add minced garlic, fry few seconds until fragrant, immediately add chopped parsley, stir quick and immediately pour over the white wine and scrape the bottom of the pan with a wooden spoon to get a nice sauce.
Stir about a few seconds, then turn off the heat.
Serve the squid on plates and connect their heads with squid body, pour the sauce from the pan over the squid and serve with lemon slices, boiled potatoes and Swiss chard, see the recipe here.
