Ingredients: simple, total time 60 min., 4-6 serving
2 large zucchini/ cut into rings
3 medium potatoes/ diced
1 onion/ finely chopped
1/4 celery root/ diced
1 root of parsley/ cut in pieces
3 medium carrots/ cut into rings
2 large cloves of garlic/ cut in 1/2
1 liter of water or vegetable broth
salt and pepper to taste
2 Tbsp fresh parsley/ finely chopped
grated Parmesan if desired for sprinkling
Preparation:
Clean all vegetables and wash then chop as described above.
Put all the vegetables in a medium saucepan, cover with water or broth and cook on low to moderate heat for about 30 minutes.
After passing time, blend all the vegetables well with the help of a stick mixer.
Add more water to the pan, season with salt and pepper and mix well. Put it back on the stove and cook for another 15 minutes until it boils.
When it boils, turn off the heat and sprinkle with chopped parsley.
Serve in deep plates and sprinkle with grated Parmesan as desired.

Tips and Advice
For those who love meaty dishes you can also add potage to the served plate, fried bacon without fat, or Porcini mushrooms cut into smaller cubes.
The potage must be thick, I added about 180 ml of water at the end of the mixing.
Keep covered in the refrigerator for up to 4 days.
If you want, you can freeze the broth, pack it in special boxes with a lid for up to 2 months. Before consumption, take it out one day before and put it in the refrigerator. Heat in a pan.
