Cabbage soup

This soup is ideal for those who want to lose weight, because it is delicious, very healthy and full of necessary vitamins. Without flour and with lots of vegetables. It is prepared as quickly as possible. Follow recipe.
Ingredients: simple, total time: 60 min, 6 -8 serving
3 Tbsp olive oil EVO
1 big onion/ finely chopped
3 carrots/ 2 blended, 1 cut into rings
2 celery stalks/ blended
1/2 Tbsp ground red pepper
salt and pepper/ to taste
250-300 g canned cooked or brown white beans
4 cloves of garlic/ minced
1 Tbsp thyme
1/2 chopped medium head of cabbage
1 big red bell pepper/ or 2 long peppers - chopped/ roasted and diced
2 Tbsp fresh chopped parsley
1 cube for soup
800 ml water
200 ml tomato paste+ 250 ml water
about 800-900 ml water/ or as needed to depend on the density you want to get
Preparation:
Prepare all the ingredients as described above.
Heat the olive oil in a deep pot.
Add the chopped onion, carrot and celery, season with salt, pepper and red ground pepper. Simmer, with stirring, until the vegetables are tender, about 5–7 minutes.
Add the beans, minced garlic and thyme, stir and simmer for another 2 minutes.
Add the soup cube and 250 ml of water mixed with tomato paste, stir, let it cook for about 10 minutes, then add the rest of the 550 ml water.
Immediately after that, add the chopped cabbage into smaller pieces, and cover the pot.
Cook for about 40 minutes.
Add more water according to how thick you want it to be. I added about 700-800 ml of water.
During this time, clean the pepper from the stalks and seeds, cut into strips and fry in olive oil until soft on both sides. Place on a kitchen towel and leave to cool. Then chop into smaller pieces.
When the time has passed and from the beginning of boiling, leave another 10–25 minutes, add chopped roasted pepper, parsley and celery leaves.
Season to taste with salt and pepper. Cook for another 2 minutes.
Serve warm, in a deep plates with bread.

NOTE:
You can add peppercorns and ground hot pepper to this soup if you like.
Keep the rest of the soup in the refrigerator.
If you really can't do without meat, you can use meaty ribs, which you will cook in an average time of about 40 minutes. Season and fry in little oil until golden brown on all sides. Put them on a plate lined with a kitchen towel.
