Avocado Cream Toast


  • A creamy avocado spread on well-toasted bread is among my preferred quick meals and is, in fact, one of my favorite meals overall. Its delightful taste is complemented by its health benefits. Avocado is often referred to as a "superfood" due to its essential vitamins that support our body's needs. It positively impacts heart health, eye vision, and even cancer prevention. During the summer, avocados are excellent for salads, providing a nutrient-rich addition. They are also versatile enough to be used in preparing various smoothies and desserts, such as chocolate mousse. Follow the recipe for best results.


Ingredients: 1 cup 240 ml. easy total time: 15 min, 2-3 servings

Toasts

  • 1/4 cup hulled pumpkin seeds

  • 2 large ripe avocados

  • 2 medium cloves of garlic

  • 2 Tbsp lemon juice

  • 1/4 teaspoon salt to taste

  • 2/3 cup packed fresh basil leaves

  • 4 slices of integral organic bread with seeds


Optional supplements

  • cooked eggs / fried, poached or scrambled

  • halved cherry tomatoes /1 small handful per serving

  • freshly ground black pepper/ red pepper flakes

Avocado Cream Toast
Preparation:
  1. Put pumpkin seeds in a small pan and fry over medium heat, stirring constantly, until it starts to crackle. Then put out the fire and set them aside.

  2. Peel an avocado and halve it, put it in a blender, add finely chopped garlic, lemon juice and salt. Blend until it becomes a smooth cream, blend in a couple of coats and scrape off the sides.

  3. Add the roasted basil seeds and leaves and pulse until the seeds and basil are broken into very small pieces and the mixture is even. Control the taste if you need to add more salt, until the mixture is completely shiny.

  4. Fry the bread, then spread a generous amount of avocado pesto over each slice. Serve with eggs and tomatoes. Lightly sprinkle with freshly ground black pepper, and flakes of red pepper or hot pepper, if desired. Serve immediately.

  • Pack the finished cream into sterile jars with lid, keep in the refrigerator for up to 7 days.
