Stuffed Avocado

  • A healthy breakfast with avocado and shrimps in just a few minutes. Follow recipe.

Ingredients: simple, total time. 35 min. 2 serving
  • 2 avocado

  • 190 g cherry tomatoes

  • 20 ml juice of lemon

  • 1/2 grated lemon peel

  • 10 g almond in peel

  • 15 ml Olive oil

  • salt and pepper to taste

  • mint leaves

  • 16 fried shrimps

  • 10 ml honey/ or 1 Tbsp

  • 10 ml soy sauce

Preparation:
  1. Clean and peel the shrimp, separate from the intestines, cut lengthwise and pull out the black filament. Place the cleaned ones in a bowl together with the 1/2 lemon zest. Add soy sauce, honey, stir, and cover with foil. Put in the fridge for 30 minutes.

  2. Meanwhile, grate the other half of the lemon and add lemon juice. Cut the tomato into smaller cubes and prepare the avocado. Remove the seeds and seeds from the avocado and scoop out the pulp with a spoon so that the peel is intact.

  3. Cut the pulp into small pieces and mix with tomatoes, lemon juice, and zest, add salt, pepper and mint extract.

  4. Chop the almonds into small pieces and toast them in a pan. At that moment, add the shrimps with their sauces and cook on high heat for about a minute.

  5. Fill avocados with filling and decorate with shrimp from above.
