Ingredients for the Sponge Cake

To create this beautiful cake, you will need various ingredients that come together to form a moist and flavorful sponge cake. Here’s a detailed breakdown of what you’ll need:

- Eggs: Fresh eggs are essential for providing structure and richness to the cake. They help in achieving a light and airy texture.

- Butter: Unsalted butter adds a creamy richness and depth of flavor. It is crucial to use quality butter for the best results.

- Oil: A neutral oil, such as canola or vegetable oil, contributes to the moistness of the cake without overpowering the other flavors.

- Sugar: Granulated sugar is used to sweeten the cake and also helps in creating a tender crumb.

- Flour: All-purpose flour is the main ingredient that forms the base of the cake, providing structure and stability.

- Cornstarch: This ingredient is often added to lighten the flour and create a softer texture in the cake.

- Baking Powder and Baking Soda: These leavening agents work together to help the cake rise, creating a fluffy and airy texture.

- Vanilla Extract: Pure vanilla extract enhances the overall flavor profile, adding a warm and aromatic note.

- Milk: Whole milk or buttermilk adds moisture and richness, ensuring the cake remains tender.

- Sour Cream: This ingredient adds tanginess and moisture, contributing to the cake's delightful texture.

- Orange: Freshly grated orange zest and juice elevate the flavor, infusing the cake with a bright citrus aroma.

- Cranberries: Fresh or frozen cranberries provide a tart contrast to the sweetness of the cake, making each bite exciting.

Ingredients for the Cream

For the creamy topping that will enhance the cake, you will need the following ingredients:

- Butter: Softened butter is the base for the cream, providing a smooth and rich texture.

- Cheese: Cream cheese is commonly used for its tangy flavor and creamy consistency, making the frosting luscious and easy to spread.

- Orange: Similar to the cake, freshly grated orange zest and juice will add a refreshing citrus flavor to the cream.

- Vanilla: A touch of vanilla extract in the cream enhances the flavor, providing a lovely aromatic quality.

- Powdered Sugar: This ingredient sweetens the cream and helps achieve a smooth, spreadable consistency.

Topping Options

For the finishing touch, you can choose to decorate the cake as desired. Some delightful options include:

-Cranberries: Fresh cranberries can be scattered on top for a burst of color and a hint of tartness.

- Orange Slices: Thinly sliced fresh oranges can be arranged on the cake, adding a beautiful visual appeal and complementing the flavors perfectly.

Cranberry Orange Cake
Preparation:

Sponge Cake:

  1. Preheat the oven to 160°C and prepare three 23 cm round cake pans by greasing them with baking spray. Set them aside.

  2. Separate the egg yolks from the egg whites, allowing the egg whites to reach room temperature for 30 minutes. Eggs are easier to separate when cold, but egg whites whip more effectively at room temperature. Set aside.

  3. Using a mixer, beat the butter until it becomes fluffy, approximately 1 minute. Add the oil, beating until well combined. Gradually add the sugar, 1 cup at a time, mixing thoroughly for about 1 minute. Add the egg yolks one at a time, ensuring each is well blended before adding the next.

  4. In a separate bowl, sift together the flour, cornstarch, baking powder, baking soda, and salt. Set aside.

  5. Combine the vanilla extract, milk, sour cream, and orange zest.

  6. Alternately incorporate the dry and wet ingredients into the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.

  7. Beat the egg whites until stiff peaks form, approximately 1-2 minutes. Gently fold the egg whites into the batter until combined.

  8. Toss the cranberries with flour to prevent them from sinking to the bottom of the batter, then gently fold them into the mixture.

  9. Evenly distribute the batter among the three cake pans. Bake for 20-25 minutes, or until a cake tester comes out clean. Allow the cakes to cool completely before proceeding to apply frosting.

Frosting:

  1. Combine the butter and cream cheese by beating them together for approximately 1-2 minutes until well blended.

  2. Incorporate the orange zest and vanilla extract, mixing until fully integrated.

  3. Gradually add the powdered sugar, one cup at a time, starting with four cups. Ensure to scrape down the sides of the bowl as necessary and mix until thoroughly combined.

  4. Introduce the orange juice, one tablespoon at a time, starting with two tablespoons.

  5. If the frosting appears too thin, incorporate the remaining cup of powdered sugar.

  6. Conversely, if the frosting is too thick, add the final tablespoon of orange juice. Once the desired consistency is achieved, include a pinch of salt to balance the sweetness.

Arranging:

  1. Place the bottom cake layer on a cake stand or plate. Evenly spread 1/2 cup of frosting over the top, ensuring it reaches the edges. Position the middle layer on top and repeat the procedure.

  2. Add the final layer, then apply the remaining frosting over the top and sides of the cake.

  3. Add toppings, if desired.

Buon appetito!
