Hunting Salad

3 min read

  • Hunting salad is one of those delightful winter jars that you open "just to try," and then somehow, as if by magic, the jar disappears after lunch. It has a unique charm that makes it irresistible, often leading to a second helping or even a third. The vibrant colors and enticing aromas wafting from the jar are enough to spark curiosity, and before you know it, you've polished off the entire contents, savoring each bite.

Ingredients for self-emptying jars
  • Peppers, tomatoes, and onions, all cooked in a thick and fragrant sauce, create a perfect accompaniment to various dishes. This salad pairs beautifully with roasts, succulent meats, and hearty potatoes, but it also stands alone as a quick and satisfying meal when served with a simple slice of fresh bread. The combination of flavors and textures makes it a versatile choice for any meal, whether it’s a festive gathering or a casual weeknight dinner.

  • The secret of a good hunting salad lies not in an extensive list of ingredients but rather in the technique of cooking. It is crucial not to overcook the vegetables. The peppers should retain a firm texture, allowing you to feel their satisfying crunch under your teeth, while the tomatoes should meld into a thick, fragrant sauce that beautifully ties all the flavors together. This balance of textures is what elevates the dish and makes it memorable.

  • To achieve this perfect balance, it is essential to avoid cooking the peppers and tomatoes together from the very beginning. Instead, add the vegetables at the right moment during the cooking process. By doing so, you ensure that the peppers maintain their crispness while the tomatoes break down just enough to create that luscious sauce. This method preserves the salad's juiciness and flavor, keeping it vibrant and tasty even when you open the jar weeks later, avoiding the all-too-common fate of turning into an unappetizing mush.

Conclusion
  • Homemade hunting salad prepared in this thoughtful manner is not only an excellent side dish that complements meat dishes wonderfully, but it also serves as a delightful independent appetizer. When paired with fresh, crusty bread, it becomes a satisfying meal in itself, perfect for those moments when you need something quick yet flavorful. The versatility of this salad truly makes it a staple in any kitchen, especially during the colder months when hearty flavors are most appreciated.

Ingredients: simple,total time: 80-90 min.
  • 2 kg of red pepper

  • 2 kg of tomatoes

  • 500 g of onion

  • 200 ml of oil

  • 100 ml of vinegar

  • 2 Tbsp of sugar

  • 1 Tbsp of salt

  • 1 teaspoon of ground pepper

  • 2-3 cloves of garlic

  • 1 bunch of parsley

  • 7-8 sterile jars/ 250g

Preparation:

Tomatoes first, and paprika only when the sauce thickens

  1. Begin by washing the tomatoes, removing the stems, and either grinding or blending them.

  2. Transfer the mixture to a larger saucepan, add oil, sugar, salt, and pepper, and cook over medium heat for approximately 20 minutes until the sauce begins to boil slightly.

  3. As the sauce cooks, deseed the pepper and cut it into larger strips. Slice the onion into wedges and finely chop the garlic.

  4. Add the onion to the tomato sauce and cook for a few additional minutes before incorporating the pepper.

  5. Stir and continue cooking until the pepper is tender, ensuring it retains its shape and slight firmness without overcooking.

  6. This method contrasts with simmering all ingredients together from the start, resulting in a salad where the pepper strips remain distinct, as opposed to a mushy mixture resembling inferior ajvar.

  7. The sauce should thicken independently, with the pepper softening without disintegrating.

  8. Vinegar, garlic, and parsley are added at the end, followed by transferring the mixture into warm jars.

  9. Towards the end of the cooking process, incorporate vinegar, garlic, and finely chopped parsley. Cook for a few more minutes, taste, and adjust seasoning with additional salt or vinegar if necessary.

  10. Pour the hot salad into sterilized, heated jars, seal them tightly, and allow them to cool gradually.

  11. Store the jars in a dark, cool location.

Buon appetito!
