  • Chicken bites in a new way offer an exciting twist on a classic dish, presenting irresistible morsels that are sure to delight your taste buds. These bites are not only flavorful but are also prepared quickly and easily, making them perfect for busy individuals or families. When serving this dish, you have a variety of options to complement the chicken bites. You can choose to serve them alongside gnocchi, pasta, or boiled potatoes, which all provide a wonderful base to soak up the delicious flavors. Alternatively, you might consider preparing Czech dumplings, which I personally made in a delightful beige color to accompany the chicken. These dumplings are fluffy and absorbent, making them an excellent choice for this meal. For the chicken bites, the main ingredients you'll need include tender chicken breast, juicy tomatoes, briny olives, and zesty capers, all seasoned with a selection of spices that are commonly found in most kitchens. These spices can range from garlic powder to paprika, which enhance the overall flavor profile of the dish. The combination of the savory chicken with the tangy tomatoes and the salty olives creates a harmonious blend that will leave you wanting more. When it comes to preparing the Czech dumplings, the ingredients are simple yet essential: you'll need starchy potatoes, a fresh egg to bind everything together, flour for structure, and a sprinkle of herbs such as oregano and parsley to infuse the dumplings with flavor. The process of making dumplings can be a fun and rewarding experience, as you mix the ingredients, shape them into small balls or logs, and then boil them until they are perfectly cooked. This dish is not only ideal for those who are pressed for time but also caters to anyone looking for a delicious meal that doesn’t require hours of preparation. Whether you're cooking for yourself after a long day or hosting a gathering with friends, these chicken bites paired with your choice of side will surely impress and satisfy. Embrace the ease of preparation without sacrificing flavor, and enjoy a meal that brings comfort and joy to your dining experience.

Preparation:
  1. Prepare all the ingredients as described above.

  2. First prepare the dumplings.

Dumplings:

  1. Boil the potatoes with their skins on until they are tender, approximately 27-30 minutes. Drain them and let them cool.

  2. Once cooled, peel and mash the potatoes. Add the egg, salt, and pepper, then gradually incorporate the flour until a firm dough is achieved. Optionally, you may add 1-2 tablespoons of freshly chopped parsley into the dough or use it as a garnish later.

  3. Shape the dough into a "salami" form and let it rest for 20 minutes. If the "salami" is too large, it can be split in half; the width should be approximately 4 cm.

  4. Cook the entire "salami" in boiling salted water for about 15-20 minutes, turning it every 7 minutes during the cooking process.

  5. Remove the cooked "salami" from the boiling water and allow it to cool. When ready to serve, slice it into pieces 8 mm to 1 cm thick.

Chicken bites Stew:

  1. Debone and trim the fat from the chicken breast. Slice the breast lengthwise into two sections, then cut into bite-sized pieces.

  2. Place the chicken pieces in a bowl. Add a teaspoon of Vegeta, along with salt and pepper to taste, and drizzle with olive oil. Mix the ingredients thoroughly with the chicken.

  3. Heat oil over low to moderate heat.

  4. Add the diced chicken pieces and fry until they are golden brown.

  5. Once the chicken is cooked, add chopped garlic. When it becomes fragrant, add the diced tomatoes. Simmer until a small amount of juice forms.

  6. Add tomato concentrate mixed with 200 ml of water. Cook for approximately 10 minutes on low to moderate heat, then incorporate olives, capers, ajvar, oregano, and basil to taste. Adjust with salt and pepper as necessary. Continue cooking for about 15 to 17 minutes, until a rich sauce develops.

  7. Serve the chicken stew with dumplings, garnished with finely chopped parsley or oregano to taste.

Buon appetito!

NOTE:
  • Consider enhancing the Czech dumpling dough by incorporating finely chopped bacon and parsley for an exquisite flavor.

  • In the absence of tomato concentrate or fresh tomatoes, substitute with tomato paste or tomato juice, adding a teaspoon of flour to achieve the desired consistency.

  • If time is limited, you may opt for store-bought gnocchi, which pairs excellently with this dish.

  • Store any leftovers in the refrigerator for up to two days. Reheat using a pan or microwave as needed.
