## Savory Chicken and Vegetable Medley in Tomato Sauce with Baked Potatoes

  1. This dish features chicken enriched with vegetables and simmered in tomato sauce, offering a delightful taste that pairs excellently with rice, baked or boiled potatoes, polenta, or mashed potatoes. It is an ideal meal for a Sunday family lunch. In this recipe, I incorporated vegetables such as spring onions, onion, garlic, peppers, zucchini, tomato paste, and potatoes. For the meat, I used chicken thighs, meticulously trimmed of excess fat and skin. Alternatively, chicken drumsticks or white meat can be used according to preference. The spices included are turmeric, cumin, sweet ground pepper, salt, pepper, thyme, and parsley. I opted to bake the potatoes separately in the oven as a complement to the dish. However, rice, mashed potatoes, or polenta also make excellent accompaniments. You can find the recipes on my website; the link is provided in the description and below in the notifications. Ingredients: medium, total time: 100 min., 6 servings

For Chicken stew:

  • 800 g of chicken thighs / 6 piece's

  • 1/2 medium onion/ finely chopped

  • 3 fresh bell peppers/ green+red+ yellow - cut into lengthwise

  • 1 bunch of spring onions/ 5 largest pieces finely chopped

  • 1 zucchini/ diced on small cubes

  • 2 cloves of garlic/ minced

  • 1 tsp turmeric

  • 1 tsp cumin

  • 1 tomato/ peeled and chopped

  • 200 ml tomato paste

  • 330 ml vegetable broth/ or chicken broth

  • Olive oil EVO to taste

  • salt and black pepper

  • 1 Tbsp allspice

  • 2'Tbsp parsley leaves/ finely chopped


Potatoes:

  • Olive oil EVO to taste

  • 2 tsp bio dry spice Vegeta

  • 1/2 tsp salt

  • 6 medium potatoes/ sliced

  • 1 tsp dry rosemery/ or thyme

  • 20 x 20 cm baking dish

Preparation:

Potatoes:

  1. The first thing you will do is to clean the potatoes, peel them well from impurities, wash them and cut them into slices put them in a small cooking pot and cook them for about 10-12 minutes.

  2. Strain them well, then put it in a small container, add all the spices from the description for potatoes and mix. Transfer to a suitable baking dish, a 20 x 30 cm dish will be enough. You will do this when the chicken stew is ready at the end.

  3. Bake the potatoes at 180°C for about 30-35 minutes, until golden brown.

  4. (I chose oven-baked potatoes for this dish, but if you want, you can make mashed potatoes, rice or boiled potatoes.)

  5. Put 500 ml of water in a small pot and add one soup cube, wait for it to boil, then turn off the heat.

Preparation Chicken stew:

  1. Cut and prepare all the vegetables and spices as described for the chicken stew.

  2. Clean, wash and dry the chicken meat with a towel. If you want, you can remove the skin and excess fat, I removed the fat and left the one part of the skin because it will give a good taste!

  3. Season chicken meat with salt and pepper, then fry in deep wok pan with little oil, on all sides until golden brown.

  4. Remove the fried chicken, put it on a plate and cover.

  5. Remove excess fat in the same pan, fry the onion for about 3 minutes, on low-moderate heat, add the spring onions, chopped tomato and sliced peppers. Add a little salt and black pepper, stir and cover. Simmer for about 15-20 minutes, stirring occasionally.

  6. During cooking, add minced garlic simmer few seconds until fragrant. Immediately add turmeric, cumin, diced, zucchini, and 1/2 amount of the broth. The vegetables should be little soften. Cook all the time on low moderate heat.

  7. Now at this moment you can put the potatoes to bake in the heated oven.

  8. When the vegetables have softened, add: tomato paste, allspice, and the rest of the broth, stir everything well - reduce heat, cook for another 25-30 minutes, until meat and vegetables softened, the sauce little thickens and acquires a nice color.

  9. During cooking season to taste, (add a little water as needed) and stir. Towards the end, add chopped parsley and turn off the heat.

  10. Serve warm with ready baked potatoes, rice or mashed potatoes.

NOTE:

  • If you are not a fan of chicken meat, you can combine beef or pork steaks.

  • Put the rest of the food in another container and keep covered in the freezer for up to 3 days.

  • Heat the portions in a pan or microwave oven.
