Delicious Chicken stew- Paprikash without Flour and Dumplings

This particular stew recipe is an excellent option for those who are mindful of their dietary choices, especially for individuals who are on a weight-loss journey or those who need to limit their fat intake for health reasons.
This time, I decided to craft a lighter version of a classic stew, steering clear of heavy ingredients such as dumplings and any additions of flour. Instead, I focused on utilizing a vibrant array of fresh vegetables to create a dish that is not only wholesome but also bursting with flavor. The vegetables I chose for this stew include aromatic onions, juicy tomatoes, sweet bell peppers, crunchy carrots, and crisp celery. Each of these ingredients contributes its own unique taste and texture, resulting in a delightful medley that elevates the overall dish.

Ingredients: simple, total time: 2h 10 min., 6-8 servings
4 + 3 Tbsp of Olive oil EVO
3 medium onions/ finely chopped
8 smaller chicken drumsticks + 4 chicken thighs about 1.3 kg total
3 fresh carrots/ thick sliced
1 large stalk of celery/ finely chopped
3 fresh bell peppers/ red, green, yellow, chopped in pieces
4 San Marzano tomatoes/ peeled and finely chopped
7 small potatoes/ cut into smaller pieces
600 ml of vegetable broth
2 tsp of red ground paprika
1/2 tsp of hot ground paprika
1 tsp of black pepper
1 tsp of salt
1 Tbsp of starch
2 Tbsp celery leaves / chopped
1 Tbsp of parsley/ finely chopped
Preparation:
Ensure all ingredients are prepared as previously outlined.
In a 5-liter pot, pour in the olive oil and heat over low to moderate heat. Add the chopped onion, stir, and cover. Sauté the onion for approximately 7 minutes, stirring occasionally.
Preparation Chicken meat:
At this stage, thoroughly wash the chicken pieces, removing any excess fat and skin.
Place the chicken in a deep bowl and season with 2 teaspoons of ground pepper, 1 teaspoon of black ground pepper, 1 teaspoon of salt, and 1/2 teaspoon of hot ground pepper. Add 2-3 tablespoons of olive oil and mix thoroughly.
Continuing to cook the stew:
Once the onion has softened and cooked, add the chicken meat. Cover and stew for approximately 10 minutes over low to moderate heat, stirring occasionally.
Add the chopped carrots and celery stalks, mixing thoroughly for about 5-6 minutes.
After this period, incorporate the chopped peppers, combine the ingredients, and cover the pot. (Do not add water!)
Simmer for about 10 minutes, keeping it covered and stirring occasionally.
Following this time, add the chopped tomatoes, mix well, and cover again. Cook until the tomatoes dissolve into a juice.
Once the tomatoes have released their liquid and melded with the vegetables, add the chopped potatoes and cover with 450 ml of broth.
Taste and adjust seasoning with salt and pepper as needed, then cover the pot. Cook the stew for 1 hour on low heat, stirring occasionally. During this time, the vegetables will soften, and the meat will become tender, even falling apart.
Adding starch to stew:
Combine the remaining 150ml of broth with the starch.
Meanwhile, finely chop the parsley and celery leaves.
After one hour, incorporate the starch-broth mixture into the ingredients, stirring thoroughly, and continue cooking on low heat for an additional 10- 15 minutes.
Near the end of the cooking process, add the chopped parsley and bay leaves. Turn off the heat.
The stew is now ready to be served. Present it in deep plates accompanied by a slice of bread or whole meal bread; you may also include diced toasted bread if desired.

NOTE:
For a thicker consistency, consider adding an additional tablespoon of starch.
To enhance the richness of the stew, incorporate 1 to 2 roots of either green or parsley root, which will impart a remarkable flavor to the dish.
Opt for larger chicken drumsticks instead of smaller ones if preferred.
For a lighter alternative, substitute chicken meat with young beef that has less fat.
This dish can be frozen in special containers with lids and stored for 2 to 3 months.
Prior to serving, remove from the freezer one day in advance, refrigerate, and reheat in a pot.
Store any remaining food in the refrigerator for up to 5 days, ensuring it is covered.
