  • 1.7 kg of mixed meat (boar shoulder, venison shoulder, neck )

  • 4-5 large onions/ finely chopped

  • 4 cloves of garlic

  • 3 carrots/ blended

  • 1 celery stalk/ blended

  • 3 Tbsp lard/or oil

  • 3 Tbsp of tomato concentrate

  • 400 ml of red wine/ not sweet

  • 800 ml - 1 liter of beef broth

  • 3 cloves

  • 3 bay leaves

  • 2 flat Tbsp of red ground paprika

  • 25 g of dark chocolate

  • 1 tsp of ground red hot pepper

  • salt and pepper to taste

Preparation:
  • The preparation of this goulash requires additional time, as the meat must be marinated prior to cooking and allowed to rest for a minimum of 12 to 24 hours.


Marinated meats:

  1. Dice the meat into small cubes and place it in a large pot along with the chopped meat, bay leaf, whole onion, halved garlic, and cloves. Pour red wine over the mixture.

  2. Allow it to marinate in the refrigerator for 12 to 24 hours.

  3. The longer the marination period, the more tender the meat becomes, which reduces the cooking time required.

  4. Prior to cooking, thoroughly drain and dry the meat, ensuring to reserve the marinade for use during cooking.


Preparation of Goulash:

  1. Heat the fat or oil in a deep saucepan over low to moderate heat.

  2. Sauté the chopped onion in the hot oil, covering and stirring occasionally until it achieves a golden brown color.

  3. Once the onion has softened, add the blended celery and carrot, mix thoroughly, and allow the ingredients to simmer for approximately 10 minutes.

  4. Add the chopped garlic (using vegetables from the marinade if desired). As soon as the garlic becomes fragrant, incorporate the prepared meat and cook until the liquid evaporates.

  5. After this process, introduce smoked and sweet ground pepper, tomato concentrate, cloves, and dark chocolate.

  6. Pour in the remaining wine, add the marinade liquid along with the bay leaf, and cover all ingredients with broth.

  7. Simmer on low heat for about 2-3 hours with the lid on.

  8. Stir occasionally and add more broth as necessary.

  9. During this time, ensure the meat becomes tender and aromatic.

  10. If the stew lacks thickness, remove a portion of the vegetables, blend them, and return them to the pot.
