Italian-style Goulash

Goulash in Italian style, very quick and simple and very delicious! A combination of sliced pork meat, with the addition of onions, carrots, celery, wine and broth give a perfect taste! Follow recipe.
Ingredients: simple, total time:
800 g pork meat / cut into cubes
3 Tbsp Olive oil EVO
2 medium onions/ finely chopped
2 carrots/ blended
1/2 stalk celery/ chopped
120 ml dry white wine
200 ml vegetable broth
600 ml water
salt and pepper to taste
1 tsp each sage and rosemary/ or to taste
Preparation:
Prepare all the ingredients as described above.
Fry the chopped onion in a wok pan, on low to moderate heat until it becomes transparent, stirring occasionally.
Add chopped celery and blended carrot, diced pork meat, cover all the ingredients and simmer for about 10 - 15 minutes, until the vegetables are well softened.
After the specified time, pour dry wine, mix and let it simmer for about 10-15 minutes.
Add 1/3 the amount of water, rosemary, sage, salt and pepper to taste, cook another 1 hour and 30 minutes, with gradually addition of water and stirring occasionally, covered.
Taste and add spices as needed.
Serve with pasta or boiled, potatoes or polenta.
The stew is ready when the sauce thickens, the meat is well softened, the vegetables should melt with the sauce.
