5 kg of peppers without seeds and stems
150 g of salt
200 g of sugar
500 ml of 9% alcohol vinegar
500 ml of water
2 heads of garlic
3 Tbsp of dried parsley leaves
Preparation:
Thoroughly wash the peppers in warm water twice, ensuring the stalks and seeds are completely removed.
Next, cut the peppers into large pieces, place them in a larger pot, and add sugar, salt, water, and vinegar.
Stir the mixture, cover with a clean cloth, and let it stand for 24 hours, stirring occasionally 3-4 times during this period.
Meanwhile, finely chop the garlic and add it to the peppers along with dried parsley. Mix everything well.
Sterilize the jars in an oven preheated to 100°C for approximately 20 minutes.
Fill the jars with the peppers, using a ladle to pour the liquid to the top.
Before sealing with the lids, you may choose to pasteurize the jars. If pasteurizing, add 5 g of preservative on top of each jar.
Ensure the lids are new and clean, and seal the jars securely.
Place a clean cloth in a larger pot, arrange the jars so they do not touch, add water up to the base of the lids, and simmer on low to moderate heat.
After reaching a boil, continue to cook for an additional 15 minutes. Turn off the heat and allow to cool.
