Dover Sole fish on Butter simple way

  • Prepare Dover Sole in butter using a straightforward method. This delicious dish requires only a few ingredients and is ready in just 20 minutes. Follow the recipe for best results.

Ingredients: simple, total time: 25 min., 2 serving
  • 1 piece Dover sole fish/ cut in two fillets

  • 1 tsp salt

  • pinch of black pepper to taste

  • 2 Tbsp butter


Mixture for dipping:

  • 3 Tbsp flour

  • 2 tsp red ground paprika

  • 1 Tbsp cornstarch

  • pinch of salt and black pepper


Topping Sauce:

  • 100 ml Olive oil EVO

  • 2 cloves of garlic/ minced

  • 1/4 lemon juice

  • 2 Tbsp fresh parsley/ finely chopped

  • pinch of salt and black pepper

Preparation:
  1. Thoroughly wash and dry the fish, ensuring the skin remains intact.

  2. Use a knife to gently scrape the skin, effectively removing any dirt.

  3. Slice the fish into two fillets, beginning from the tail and moving towards the head. Repeat this process on the opposite side.

  4. Create three incisions on the skin itself.

  5. Season with salt and pepper according to preference. Set aside.

  6. Combine minced garlic, olive oil, chopped parsley, and lemon juice in a sauce bowl. Mix thoroughly and set aside.

  7. In a shallow dish, mix flour, salt, pepper, ground pepper, and starch until well combined.

  8. Coat the fillets in the mixture on both sides, then shake off any excess. Set aside.

  9. Melt butter in a large non-stick pan over moderate heat.

  10. Once the butter begins to sizzle, place the fillets in the pan with the skin side down.

  11. Fry for approximately 5-6 minutes until the fillets are well browned.

  12. Carefully turn the fillets to the other side and fry for an additional 5-6 minutes.

  13. Serve with a slice of lemon, accompanied by baked or boiled potatoes with Swiss chard, along with the prepared salad and dressing.

NOTE:
  • To grill the fish directly on the grill, it is unnecessary to add flour or other ingredients. Simply brush the grill with oil, and season the fish with salt and Vegeta dry seasoning.

  • Alternatively, you can bake the fish in the oven. Place the fish on a greased, fireproof dish and drizzle with olive oil. Bake at 180 °C for approximately 30 minutes, turning the fish halfway through the cooking time.
