Tortelli with Porcini sauce
A Wonderful and Quick Italian Meal: Pasta Tortelli
One of the most delightful and satisfying meals that one can prepare in a short amount of time is a sumptuous dish of pasta tortelli. This traditional Italian delicacy is not only easy to make but also bursting with rich flavors that transport you straight to the heart of Italy. The star of this dish is undoubtedly the tortelli, which are small. These stuffed pasta parcels can be filled with a variety of ingredients, making them versatile and appealing to many palates.
Ingredients and Preparation
To create this wonderful meal, you will need fresh tortelli, which can either be purchased from a local Italian market or made from scratch if you are feeling adventurous. The filling can vary, but a classic choice might include a blend of ricotta cheese and spinach, or perhaps a savory mixture of potatoes and herbs.
The sauce that accompanies the tortelli is equally important, and in this case, it is a luxurious sauce made from porcini mushrooms, which are known for their deep, earthy flavors. These mushrooms are often dried and rehydrated, releasing an intense umami flavor that enhances the overall dish. To prepare the sauce, begin by sautéing the rehydrated porcini mushrooms in a generous amount of olive oil, allowing them to caramelize slightly and release their aromatic qualities.
Creamy Texture with a Twist
Next, you will add boiled cream to the sautéed mushrooms, creating a rich and creamy sauce that clings beautifully to the pasta. The cream not only enhances the texture but also balances the earthy notes of the mushrooms, creating a harmonious blend of flavors. To add an unexpected twist, a pinch of turmeric is introduced. This vibrant spice not only infuses the dish with a warm golden hue but also contributes a subtle earthiness and a hint of warmth that complements the other ingredients perfectly.
Finishing Touches
To elevate the dish further, freshly grated Parmesan cheese is sprinkled generously over the top just before serving. Parmesan adds a salty, nutty flavor that beautifully contrasts with the creaminess of the sauce and the earthiness of the mushrooms. Finally, a handful of freshly chopped parsley is added as a garnish, providing a burst of color and a fresh, herbal note that brightens the entire dish.
A Simple Yet Flavorful Experience
The beauty of this pasta tortelli dish lies in its simplicity. With just a few high-quality ingredients and a straightforward preparation method, you can create a meal that feels indulgent yet is quick enough for a weeknight dinner. The combination of flavors—from the rich, creamy sauce to the aromatic mushrooms and the sharpness of the cheese—makes every bite a delightful experience.
Conclusion
In conclusion, this wonderful and quick Italian meal of pasta tortelli in a sauce of porcini mushrooms and boiled cream, accented with turmeric, Parmesan, and parsley, is an excellent choice for anyone looking to enjoy a delicious and satisfying dish without spending hours in the kitchen. It truly encapsulates the essence of Italian cuisine: simple ingredients transformed into something extraordinary.
Ingredients: simple, total time: 40 min., for 2-3 servings
500 g tortelli filled with porcini mushrooms
60 g dried porcini mushroom mix
Salt and pepper to taste
1 Tablespoon of oil
1/2 onion/finely chopped
2 cloves of garlic/chopped
20 g of butter
500 ml of porcini mushroom liquid for cooking
400 ml of cooking cream
1 teaspoon of turmeric
2-3 Tablespoons of chopped parsley
1 handful of Parmesan, to taste
Preparation:
Begin by preparing the ingredients as detailed above.
Soak the dried mushrooms in 500 ml of lukewarm water, allowing them to stand for approximately 20 minutes.
Once soaked, strain the mushrooms, reserving the liquid in a small pot, and set it aside.
Heat oil in a large pan over low to moderate heat.
Simultaneously, bring salted water (1 teaspoon of salt) to a simmer for the tortelli.
When the oil is heated, add the onion and cook for about 5-6 minutes until it softens thoroughly.
Afterward, add the mushrooms and cook for approximately 2-3 minutes, stirring continuously. Then, incorporate one-third of the reserved liquid, along with a pinch of salt and pepper to taste. Cover the pan and cook for about 35 minutes, adding the remaining liquid incrementally every 12 minutes.
When the liquid has nearly evaporated (leaving about 2-3 millimeters in the pan), add the chopped garlic, stirring for about 10 seconds. As soon as the onion becomes aromatic, add a cube of butter and stir until it melts.
Immediately pour in the cooking cream, season with salt, pepper, and turmeric to taste, and mix well. Cook for approximately 5 minutes until the cream thickens.
Near the end, incorporate the Parmesan and stir in the parsley for about 1-2 minutes.
Add the cooked and well-drained tortellini to the pan, stirring for about a minute.
Your meal is ready to be served; present it on shallow plates with additional Parmesan.
Buon appetito!

NOTE:
In case you use fresh porcini mushrooms, you will need about 500-600 g, with the addition of vegetable broth.
You can replace sour cream with Philadelphia neutral cream cheese and a little milk; beat until you get a homogeneous consistency like cooking cream. Bechamel can also be used, but the taste will not be at all similar to this recipe.
Keep the sauce in the refrigerator for up to 1-2 days; add a little liquid during heating.
