Pasta in Tuna Tomato and Sour cream sauce

  • Prepare pasta with tuna in tomato sauce quickly and easily. Enjoy a ready meal in just 25 minutes by following the recipe.


Ingredients: simple, total time: 25 min. 2 serving
  • 300 g penne Italian pasta

  • 2 Tbsp Olive oil EVO

  • 1 big clove of garlic/ minced

  • 5 cherry tomatoes/ finely chopped

  • 1 tsp tomato concentrate

  • 100 ml water

  • 1 Tbsp sour cream

  • 100 g can tuna/ filtered

  • oregano to taste

  • salt and pepper to taste

  • 1 Tbsp Parmesan cheese grated

Preparation:

Bring the pasta water to a boil and add 1 teaspoon of salt.

Once boiling over medium heat, introduce the pasta.

Cook the pasta as per the package instructions.

Drain and place it in a colander while preparing the sauce.

Wash the tomatoes, cut them in half, and chop finely.

Chop the garlic and set it aside.

Heat the olive oil over medium heat.

Lower the heat, add the chopped garlic, and sauté for 1-2 minutes. Add the concentrate mixed with a little water and stir. Allow to simmer for approximately 5 minutes.

Season to taste, incorporate the oregano, and mix the cream thoroughly.

Cook for a few minutes until smooth, then add the drained tuna and combine well.

Cook for an additional 2 minutes, then add the grated Parmesan and 2 tablespoons of the pasta cooking liquid.

Finally, add the pasta, mix thoroughly, and turn off the heat.

Serve warm with Parmesan cheese.

NOTE:
  • In the absence of tomatoes, 120 ml of tomato paste can be substituted.

  • As an alternative to cooking cream, one tablespoon of Philadelphia cheese mixed with a small amount of water may be used.
