Ingredients: simple, total time: 35 min.
Coffee Cake
360 g self-raising flour
360 g butter
280 - 360 g brown sugar/ or white sugar, can be also less
350 g eggs/ or 6 large or 7 small eggs
3 1/2 Tbsp of ground instant coffee
3 tsp of baking powder/ 15 g
1-2 Tbsp of milk
Coffee Buttercream
300 g butter
250 - 280 g powdered sugar/ can be also more if you like sweetener
3 - 4 Tbsp of instant coffee, depending on how strong you want the coffee flavor to be
1 Tbsp of hot water to dissolve the instant coffee
300 g walnuts crushed
Preparation:
Coffee and Walnut Cake
Preheat oven to 160°C fan/180C
Grease two non-stick, 18 cm cake tins and set aside.
Add self-raising flour, baking powder and instant coffee to a medium plastic bowl and mix until well combined.
Next, add a butter and brown sugar to a large, deep bowl. Then, whisk for 3–5 minutes.
Pour one egg into the bowl and whisk until it to foam.
Repeat this step for the remaining eggs.
Add 1/2 of the dry ingredients into the egg mix and pour in a splash of milk and mix for a minute.
Repeat this step for the remaining dry ingredients and mix until well combined.
Pour cake batter into the greased tins and bake for 25 minutes or until done.
Remove cakes from tins and leave to cool upside down.
Coffee Buttercream
Whisk a butter which stood at room temperature in a large bowl for 1 minute to a foam.
Add half of the sifted icing sugar to the butter and whisk for 3 minutes.
Then, add the remaining powdered sugar and whisk for another 3 minutes.
Next, add the instant coffee and whisk for 2-3 more minutes.
Decorate cake with buttercream and walnuts
Divide both crusts into 2 parts, so you will have 4 crusts, coat each crust with buttercream, to top and around the cake.(and flatten the cream with a spatula each part)
On the top of the cake and on the side, sprinkle with finely chopped walnuts.
You can decorate it with half a core of walnuts and some whipped cream, just to make it look nice and more decorative.

Tips and Advice
Butter, milk and egg - Use room temperature unsalted butter.
Brown Sugar - used with flavor caramel, but you can use white sugar instead.
Self-raising flour -Make sure you sift self-raising flour before mixing.
Baking powder - Baking powder should also be sifted before mixing.
Instant coffee - Use any instant coffee for this recipe.
Hot water -Is used to dissolve the coffee.
Walnuts – Use fresh walnuts for this recipe. You can half grind the walnuts and half finely chop them in a super chopper as you like.
Keep the rest of the cake covered in the refrigerator for up to 4-5 days.
